Zuni roasted chicken with bread salad, collards, cornbread and sausage stuffing, mac and cheese, “rice an’ peas”.

Yes, DD2 & SIL enjoyed! It’s all good, we’ve had a great Christmas so far. BUT please don’t tell anyone - I’m getting to like these scaled down holidays A LOT, but shhhhh!

I recommend having perogies with a dollop of sour cream.

Dinner - prime rib with jus, horseradish, twice baked potatoes and zesty green beans. (Garlic, mustard, walnuts, dill, anchovies, vinegar olive oil, salt & pepper.) All good, beef flavorful and tender - also only $6.97/lb. enjoyed a good red wine alongside.

Thank you! Yes, I’ve known that sour cream is recommended, but we didn’t have any. Honestly, after sautéing in butter, these didn’t need a thing in my opinion, but maybe I haven’t gilded the lily yet with these fabulous delicacies. Thanks for the recipe link, I’ll check it out.

It was in the 70s today, so we were able to rescue our plans and host dinner with friends outside. I overcooked some devils on horseback to start, followed by a nice salad with cherry-dijon vinaigrette. Then homemade pappardelle with beef ragu (cheek, shank, and short rib), green beans amandine, and sesame semolina bread. Cherry cheesecake for dessert. And many nice wines: Veuve Cliquot sparkling rosé, Biltmore Blanc de Blancs, old and new world reds, and Kendall Jackson late harvest Chardonnay. Followed by decaf coffee with homemade Irish cream.

Mediterranean inspired meat loaf (with roasted red peppers, capers, pine nuts, oregano, lemon zest, garlic) wrapped in bacon with braised red cabbage and mashed potatoes

Another snacky festive meal: duck liver mousse with black winter truffles and Madeira maple gelée, crackers and cornichons. Salad of endive, radicchio, escarole, avocado, radish, purple daikon. The bitter greens nicely offset the very rich mousse. Did not care for the overly sweet gelée - in past years this place sealed the mousse with duck fat and I much preferred that. Actually cooking for tonight!

It’s a Kalorik Air Fryer that also does like 10 other things (baking, grilling, proofing, etc) and comes with a variety of gadgets, even a special tray for bacon. Goes up to 500 degrees (my last one was only 400). Supposedly it makes a great steak but we will have to see about that!

Aside from the dumpling adventure, there was actual Christmas dinner: chicken cutlets, sour cream mashed potatoes, green beans Almondine, BFs Mac and Cheese. Apps: mom’s stuffed artichokes and shrimp cocktail. We were all over the place today.

So an easy dinner that’ll give me a couple of work lunches: Sauteed chicken and broccoli with garganelli pasta in a Parma Rosa sauce.

Damn straight there was wine.

Used my leftover beans with bacon, pork chops and duck to create a leftovers cassoulet, topped with breadcrumbs, and used some duck fat to fry some cabbage to make a makeshift haluski.

Not the most attractive dinner:

Leftover prime rib from dinner with the fam, leftover beef jus, broccolini, frozen Trader Joe’s hash browns with ketchup.

Yes there was wine.

Pastel Azteca with corn tortillas, tomatillos, poblano chili, chicken thighs, corn, cilantro, cumin, creme fraiche, monterey jack, cotija cheese - the poblanos had more heat than usual but added a nice bite to the dish
