My Christmas Eve dinner was left over gumbo with the other half of the crab, slaw and warm baguette. And wine. And there was butter, lots of butter.
Snacky feast of three fishes: salmon roe and cream cheese on endive leaves with lemon juice, hot smoked steelhead trout (thanks @small_h!) with spicy remoulade and crackers, fabulous smoked cod liver (thanks @naf!) on nori and crackers, way too salty gravlax with sour cream on nori.
Leftover gravlax going into scrambled eggs and/or a salad to try to deal with the excess saltiness.

Inspired. I’m putting this one into my idea bank, with a tip of the (Santa) hat to you. Snacky Feast of the Fishes might have to happen here way before Christmas Eve rolls around again.
I’ve done it different ways the last 3 Christmas Eves. Always tasty and fun. Splurgy but not over the top. Works for NYE too.
Son and family for Christmas Eve. Standing rib (turned out too rare), Yorkshire (not enough), roasted carrots, baked yams (kids loved.) Then the croquembouche that son and kids put together earlier in the afternoon. They filled, he glued. A little messy but delicious. He said, “Next year make a double batch”.
Looks like a towering success. Yum!
Actually, a couple of hours later we noticed that it was the Leaning Tower! Still, “ate well”.
For Thanksgiving I served smoked salmon and cream cheese on endive leaves. People liked it. It’s an idea I first came across in Madrid.
I love these and can eat an embarrassingly large number of them!
Christmas food part one:
In search of a Christmas project and perhaps a new tradition, BF and I made dumplings. Before we even opened presents, we headed to the Asian market for supplies. We wanted to make beef dumplings instead of pork, and they had no ground beef so the butcher ground us some flank steak to order. We ended up with 42 in total, and they were delicious. This is our third time making them and I’d say our crimping skills have finally become automatic. We made a dozen and froze the rest. BF whipped up a sauce to go with it consisting of light and dark soy sauces, fresh garlic and ginger, sesame oil, chili oil, and chili crisp. Merry Christmas!

I had a quiet day, which is what I wanted.
Had my traditional Christmas dinner, although I couldn’t find a small beef tenderloin this year. So I went with filet mignon with cognac cream sauce.
Sides were baby gold potatoes, par-steamed and then roasted in the convection oven with olive oil, s/p, and Herbs de Provence. Steamed asparagus as the green on the plate. There was wine.
Dessert was a mini lemon cheesecake with raspberry sauce and the gingersnap crust that wouldn’t release from the bottom on the pan sprinkled on top. Forgot the fresh raspberries, but it was still very good!

Ok so everyone’s plans have blown up this Xmas including mine and family’s, in addition to friends & all I’ve talked to today. Not surprising I guess, in these strange times. DD2 & SIL are in Arizona visiting her in-laws. Last night was supposed to be a party at her BFF’s parent’s house, but there was a Covid exposure & party cancelled. Sooo, this is what they had & Im jealous actually.
We were supposed to go to DD1’s & have cioppino with her & the bf, but he got sick. We were going to go out, but wasn’t feeling it with the variant, so Thai takeout it was. Really good too and quite a feast. A few of the usual Thai dishes, with leftovers.

We also went to an Asian market which was more crowded than I expected. In that general area, we had to decide between three of our favorite Chinese restaurants for dinner and ended up at Shanghai Bun in Matawan. Spicy Beef Noodle Soup (I love that they package the noodles separately from the soup when you do take-out), Ma Po Tofu, Cumin Lamb, and Beef Sandwiches. We ate the Xiaolongbao/soup dumplings there as they don’t travel well. Sorry we missed you @seal. We were there closer to 5pm

Funny story - a good friend whose birthday is today had her plans totally derailed for yesterday and today. (Not Covid related) Bemoaning her plight to a neighbor, said woman reminded her she was Jewish, and if she wanted to join her for a Chinese meal out, to call her later! Everyone needs that option, IMO.
H traded some baklava for homemade potato, onion, and cheese pierogis. We had these a few nights ago; having never had a non-commercial pierogi, what a fantastic delight. We both loved them. We shared an artichoke earlier & weren’t sure it would be enough food (pictured on salad plate), but they were deliciously filling. Can’t wait to try making them. Does anyone have or could recommend a good recipe?

I decided to have a Navidad dinner. Roasted a marinated and wrapped in bacon turkey tenderloin with a chipotle cranberry sauce, chorizo dressing, Mexican street Brussels sprouts and a salad of mixed greens, mango, avocado, onion with a lime dressing. There was wine. And peppermint ice cream for dessert. Snow is forecast starting Sunday night.
