What's For Dinner #75 - the " Thanks and Giving Season" Edition - November 2021

Interesting flavor combinations of this Thai/Asian-fusion inspired veal stew from a Vongerichten recipe - with vanilla bean, key lime leaves, lemon grass, chili, garlic and many different vegetables individually blanched and added at the very end. Overall very tasty and much lighter than your “regular” veal stew…

Last night we invited three friends/neighbors for drinks and apps/snacks. One couple brought a fruit tray with chili-lime yogurt dip. I served spinach-artichoke dip with crudite and pita crackers, pistachios, spicy candied pecans, prosciutto and mozz pinwheels, spicy Spanish pickled peppers, Brie cheese with local jam, maple syrup cream sandwich cookies, and (not pictured) pups in puff pastry and caramelized onion and cheese puffs. A ridiculous amount of wine was consumed - a nice bottle of California bubbly, an Italian Vermentino, a NZ Sauvignon Blanc, an Italian Primitivo (my personal favorite, along with the bubbly), a CA Pinot Noir, and an Italian Nebbiolo from Langhe that my friend brought. Four hours later, everyone headed home. A success, I think!

I have that exact same coffee table, from my parents; it looks great with the shared food, and sounds like a fun time. Your weather is still warmer than ours I think…lucky!

Tonight I made a taco kit billing itself as “Korean inspired” and used ground turkey. With fresh toppings it was not bad, really. Rounded things out with leftover pinto beans and a wintery salad with collards, cabbage, green grapes, pomegranate arils, pear, and pepitas in a tangy dressing. Plus sesame-honey-soy green beans.

Crépinette tonight, basically it’s a flattened sausage, instead of a casting, the minced pork was wrapped by caul fat. I browned the parcel before adding sauvignon blanc and transferred the cooking from stove top to oven.

Salad with greens and orange. And a lot of cheese (brie de melun/ galet bleuté/ selles sur cher).

Oh, I didn’t. I had a very mild case of shingles and had to wait a year to get my 2 Shingrix shots. My very mild case was bad enough. I never want to have it again!

I know nothing about Shingrix vaccine, tried to read more on it, they were in fact authorized since 2018 in Europe, but not available yet in France.

Sunday night dinner on a Monday, because we opted for a long walk yesterday and I ran short of time to cook. Roast chicken with a simple pan sauce and roasted CSA vegetables.

For Boston board friends, the little chicken is from Lilac Hedge Farm. Very nice. I’ll make chicken stock tomorrow. That should tell me if they’re my new pick for locally raised poultry.

I’m running a 99.9 temp tonight with a sore arm and have no appetite (got my first Shingrix vaccine yesterday). Hopefully things will be better tomorrow.

I need to get onboard that Shingrix train myself soon. Seems wise to have easy food in the house in case I need recovery time.

Thank you. The pharmacist at Stop & Shop told me most people experience more side effects after the 2nd dose of the vaccine, so I have that to look forward to in several months. Your roast chicken dinner looks delicious…DH ate leftover pork roast, apples/onions/squash and broccolini for his supper. I’m just not hungry. Maybe a cookie and some tea later.

Dinner out at a favorite Viet/Thai/Malaysian place; met up with long time friends, nice time & great food, as always.
Tanqueray and Tonic for two of us, bourbon rocks for the other two. Food was: fresh rolls and cashew chicken sesame wraps for appetizers. Followed by Adobo pork, orange chicken, drunken beef noodles and Panang Chicken Curry. All excellent as usual!

Tonight was an OG spinach salad, so good!

Last night’s meatloaf served its purpose in life tonight - meatloaf sandwiches! Warmed up just enough to melt the white cheddar cheese. Incongruous leftover sides (Mexi-Rice, mashed cauli, shrooms and asparagus) helped clean out the fridge a bit.

This is the post eating photo. I wasn’t sure how this Moroccan spiced veg stew would turn out, but it was pretty tasty and a nice light departure from some of the heavier carby things we’d been eating. Loosely based on a Deb Madison recipe, I used this rendition, http://www.kevinmaccooking.com/2012/04/chickpeas-and-greens-with-moroccan.html and swapped out a can of chickpeas for green beans. The preserved lemon added just the right brightness. We served this with bread on the side, and topped it with harissa and yogurt (1) or feta (2).
