What's For Dinner #60 - The Hot August Nights Edition - August 2020

Still in storm cleanup mode with family and neighbors. Last few days its been potluck supers on my block. Didn’t want to pull out the camera when so much needs to be done.

Safe save and cool HO’s!

Half way through the heat wave, a few more days to go …Need to water plants several times a day, my place and my neighbour’s as they are on vacation. Need to feed their cat too. Ever since he had very bad allergy and couldn’t be solved with all the expensive med proposed by the vet, he is on raw meat only diet with no biscuits and the miraculously the nasty allergy is gone and he is much slimmer now.

Dinner, I made a chilled cucumber, pea, fresh onion and mint soup.

Swordfish with berry butter, red currents, tarragon, parley and lemon olive oil and a spinach salad.

Wow! Those are tomatoes? I’m not at all envious on seeing you en route to Marco Polo Airport. Sheltering in place can be nice too. :innocent: For one thing, I have saved a PSTOM on travel. @LindaWhit;Did I get that right?

Yes, it is a bit over the top isn’t it? It was a gift from a friend a couple of years ago. Even I, the martini king, did not think i would ever use it. Last night was the first time.

I only first had L & O a couple of years ago at this same friend’s house. Then again at a Nose-to-Tail BBQ a group of friends and I had to honor Anthony Bourdain after his death. I was tasked with cooking it, and called it “Not Your Grandma’s Liver and Onions”. It included a seasoned flour coating and a deglazing in Cognac. I outdid myself.

Here it is. You can read about the whole thing here if you would like.

I think more people my age would like it if they experienced liver in this manner. Instead, their parents never cooked it for them because their parents (grandma) probably cooked it until it turned into shoe leather.

2 types of tomatoes … At the Italian Market of the Pizzeria we went to in Jesolo prior to going to the Airport …

  1. Ecological RAF in Spanish and NASSINA in Italian …

( I prefer the 2nd type which are much juicier and tender on the interior ) …

  1. These are just large red ecologically grown tomatoes from Puglia.

I would of bought some however, we did not want a problem and we both had so little room left in our suitcases. We checked 20 kilos each which was included in our airfares …

10 kilos for cabinet but this is not allowed at moment.

Interesting!

If I end up not traveling anywhere this fall, and it’s certainly looking that way, it will be the first year in many that I get to usher in this part of the gardening season.

If you have the land to grow tomatoes and / or other veggies or fruits, that is real nice.

We live in Barcelona and can grow some herbs on roof terrace however, not much more due to weather.

Have a wonderful August.

Ofal meats are quite common and have made a come back in both Spain and Italy.

Sautéed calves liver is typical and served on a bed on onions.

Looks delicious.

They have been very popular amongst the elder generations.

The most famous Spanish tapa in Jerez de La Frontera is "kidneys in jerez fino sherry !

Tonight I made Thai basil chicken and added haricots and mushrooms. I made it saucier than most with a slurry of cornstarch and chicken broth. Served over cauliflower-jasmine rice.

Referenced these recipes:

We were lucky enough to get fresh Thai holy basil from a local brewer friend.

That looks delicious. I may have to get some calves liver the next time I’m shopping though I’m the only one who will eat it. Do you eat chopped liver too?

Dinner was a head scratcher for me tonight until my dear wife suggested “the corn and potatoes we have”.

That’s what I did. I do think we exceeded TPSTOB…
