What's for Dinner #59 - the Summertime Covid Blues Edition - July 2020

Thank you, that sounds wonderful. I like your variations better than the original. I think I would try those. Too late for dinner tonight, went with an old favorite, but I always have a lot of pork tenderloin in the freezer, so next time.
Old favorite in case anyone is interested: https://www.myrecipes.com/recipe/cranberry-pork-tenderloin
Served with https://www.feastingathome.com/roasted-moroccan-carrots/ and a salad. And wine of course.

grilled steak from a month ago, i think, taken from the freezer stash. diced and tossed with a little cayenne and cumin, sauteed quickly at high heat to brown a bit. Still really smokey! More rice and beans. This time black ones, and i made the rice with the bean cooking water. Very flavorful. More pikliz. We’re just about out and I never even tried it at it’s full capacity - tomorrow would have been the 3 days i was supposed to let it marinate! That’s ok, i’m making more.

Thanks for your link @BeefeaterRocks. Sounds good. Highly encourage you to try original, as it was so dang good, and the flavors were amazing. I wouldn’t have thought it would deliver the impact it did. Hopefully our envisioned variation will be good too, but you never know…

That Mississippi roast looks delicious! That’s the one with the pepperoncini?

Quick and easy pasta last night. Italian sausage, broccoli, cherry and sun dried tomatoes, vermouth, lemon, red pepper flakes, and lots of parm.

Do you keep goats or is there another great story I missed?!

Dinner tonight will be crepes stuffed with mushrooms and spinach.

I volunteer with a non-profit on Sundays that sends its goats out to clear brush, grass, etc., on private and public property. “Green” lawnmowers! I just feed and scoop poop and love them.

Very cool, sorry I missed this earlier. The photos caught my eye.

I mostly followed this recipe for the filling, only I grated the cucumber, salted them to remove water, and mixed into the yogurt sauce:

And made some misshapen flour tortillas using this recipe:
