Simple Saturday night comfort food here: chicken cutlets and mac and cheese. I feel like such a meal is a cop out but after a long day at work, this required minimal preparation and work.

So far from it! That looks scrumptious! I do love breaded cutlets, but think it’s too fussy to make them. So this meal looks like effort to me!

Mahoney’s right around the corner from me to get herbs, lettuce, tomato plants (patio and Ramapo) and flowers for my deck. Most exciting were the Ramapo tomatoes. Their write-up said they were bred for flavor and what those in the know remember as “New Jersey tomatoes”. This Jersey Girl can’t wait to see if they live up to their name.

Also purchased 90 lbs of cat litter for the pee-and-poop machines (seriously, where does it all come from?) and a couple of other stops.

Chats with a couple of neighbors when I got home from errands, then some relaxing. The repotting of flowers and herbs can wait until tomorrow, said Scarlett.

Decided to cook the duck breast in my freezer pre-C-19. Seasoned simply with s/p, and pan-seared, then finished in the oven. Sauce was a combo of pomegranate juice, lime juice, blood orange syrup, freshly grated ginger, and hoisin sauce. Odd combo, but it worked.

Israeli couscous and asparagus alongside. And wine.

The only drawback to the day was forgetting the damn saute pan was STILL FRICKING HOT while the duck was resting on the stovetop and grabbing the handle to move the duck to a plate to rest. I will have blisters on my ring finger and the pad of my palm just below my thumb.

Imanidiot.

We did takeout at both lunch and dinner - bday kid’s choice. Dumplings and the Pixar short Bao, then pizza picnic.

Never a cop out. You do what you can when it comes to meals after a long day. And that meal is most definitely NOT a cop out!

I used to go flour, egg, then breadcrumbs. But lately I’ve skipped the flour. I notice no difference in quality but one less step which is a HUGE plus in my eyes.

Some days I get home and energy and creativity is flowing through me.

Other days its a slew of expletives and “We’re having chicken cutlets!”. No one ever says no to that as it happens! LOL
