Dinner tonight designed to clean out some things lingering in the fridge. Jambalaya with andouille and leftover rotisserie chicken; a whole mess of crispy Brussels and side salad.
Thanks! It was intended to be an easy way to use b/s chicken breast, but ended up being much more prep than I planned.
Tonight I made beanie weenies by combining leftover baked beans with two drained cans of white beans, some brown sugar, bay leaves, savory, and leftover tomato-mustard-sweet relish sauce from cheeseburger casserole. Topped with hot dogs for the kiddo and spicy local Andouille for the adults. With a Caesar iceberg wedge.
Perfect.

BF’s hybrid Chicken Katsu. Chicken is marinated in curry powder and Chinese five spice before being breaded in panko. It is then covered in a coconut-curry sauce, with chick peas and green peas added for texture. Side of steamed broccoli and basmati rice (not shown).
It was cold enough here today in SE Michigan to bring back a Winter type dish. Baked Spaghetti was WFD tonight…
bad pic of a very good dinner. Kimchi fried rice with my 9 day old very gingery/garlicky kimchi, pepper bacon, and baby bok choy that had to be eaten. rice fried in butter, with gochujang, Everything but the Bagel seasoning, and sesame oil. i just love the combo of flavors/textures.
