Ha! Everyone here was probably sick of my cooking too!

Finally catching up here! I spent most of the week working on an Instagram Mother’s Day video and story campaign at work to help boost our neighbors, a cake bakery that’s taking a hit since most wedding business is out. I love them (good people and delicious cakes! The best.) - anything we can do to help keep them afloat. I don’t do media for a living, so this was also a FUN (and time-consuming, tiring) opportunity to learn new skills.
All that to say, I didn’t put much energy into cooking this week. We had fish fillets, cuke salad, and tots one night:

Tonight was taco truck tacos. No pic - same as last time. SO good.

Discovering here, late in life, the wonders of cooking with Parchment paper. Last night fired up a small pork roast. Baked at 400 degrees to tender in just 40 minutes. Plated with ample servings of Yukon Gold Potatoes with the PSTOB mixed…
Bake a fish in parchment ( called “papillote” = parchment paper ). Very common in Spain and France.
It is unforgettable !
Take a salmon or White fish of choice and place the filete on the paper and then put tiny strips of veggies like zucchine, carrot, garlic, tomato, fresh herbs, etcetra and wrap it tightly and place in oven …

Definitely not true … NOT food coloring !! “It is the Tandoori Spices” that are rubbed into your product that you are preparing !!!
You can do a Google search for the mixture. I have never made this cuisine at home however, we enjoy very much when we go down to Madrid … (the Indian Restaurant we always go to when in Madrid, is located next to the British Embassy ) so – it is quite popular and authentic too. It is called SWAGAT, which means “luck” and “happiness” … There is also another one we like called “Tandoori Station” and it is quite a beautiful restaurant specialising in Tandoor Oven dishes.
Tandoori Fish and Prawns are unforgettable !

I took the comment to mean that, at least here in the U.S., restaurant tandoori chicken has a distinctive red color. YMMV. It IS from food coloring, not strictly spices, here.
