Rooster typed it up in the 3 favorite desserts thread, just scroll up a bit.
I used brown sugar bourbon instead of dark rum & reduced the brown sugar a bit due to the sweetness of the bsb.

Our friends had us over for grilled cheese, got dogs, and s’mores over the fire pit. I brought an arugula salad with steamed brown lentils, roasted beets and fennel, pistachios, crispy onions, and honey goat cheese with @LindaWhit 's maple balsamic vinaigrette.

Soaked about 18 hours in brine, cooked VERY slowly in a slow cooker until just under.
