I think lemon posset may be having a moment here. America’s test kitchen iirc (re)introduced them a year or two ago, and Melissa Clark of the NYT just (re)released practically the same recipe as ATK (which I found curious).
I’m intrigued by the idea of a pudding that thickens itself without starch or eggs - on my list of eggless desserts to try.
@harters or anyone else have a go-to / fool proof recipe?
I’ve got one printed out at home that I’ve been using for at least 5-6 years, but can’t find the darn thing online. Will make a note to post it tonight.
I suggest looking into renting a mobile hotspot. We picked one up in ICN, cost usd$48.50 for two weeks, about $3.50 per day. Averaged 50+ Mbps up and down Korea, and comes with a backup 5,000 mAh battery.
Prices and availability also very good in Hong Kong as well.
It was gifted to use by a refugee family we often share food with. We hadn’t had whole fish in a very long time so it was finished in no time. I enjoyed how they made it a point to let us know it was wild caught, not farmed.
A heartwarming anecdote: This family was having a tough time about a month ago and could not reciprocate. The youngest of the family, a 6th-grade boy, took it upon himself to forage for blackberries and raspberries for us! It was one of the best gifts I have ever received. We finished them in less than a minute and then noticed the boy looked kind of sad. It turned out he had foraged for more than an hour and we literally ate the fruits of his labor in 45 seconds. The following week we went out and foraged with him. Ouch! Wild raspberry bushes are thorny.

I always enjoy Felicity Cloake’s “How to make the perfect…” in my daily paper. I haven’t cooked her recipe but it may be an interesting read for you as she mentions other recipes, picking the best bits.

Tonight’s dinner went much better. I made turkey-cheddar meatloaf with bacon and chipotle bbq glaze (even used Cheez-Its as the breadcrumbs in a moment of desperation), fennel braised in broth, white wine, and butter, and tater tots. Beige-y but hit the spot.
I love the Cabot Catamount cheese! They were sampling it at our local (Marin County CA) Whole Foods recently, and I kept going back to taste it. I’d never had it before, and I hope they keep carrying it.
Glad your toddler is feeling better. I remember those days, not fondly…
Happy belated birthday!! that sounds like a very busy delicious week of celebrations!
What is your favorite non chinatown dim sum spot? I’m actually meeting family friends next week for dinner somewhere TBD, and they adore dim sum yet it’s not good where they live

Yes, I was won over by the Whole Foods sample, too!
