Oh dear…Are we seeing the beginnings of a retirement vocation?!
DW just returned from Texas, where she had a nice family Prime Rib dinner at Texas Roadhouse restaurant. That planted an itch that had to be scratched. Our local Safeway supermarket had Rib Roast (choice) on sale for ~ $6.50/lb. Bingo!
DW put together a great meal, with many items that we already had on hand.
Spicy Bean Curd with Edamame.
Baked Whipped Egg with Dried Scallops.
Shitake Mushroom stir fried with Broccoli. Chinese style potato, lightly fried and still crunchy.
The beef. One of the best roast I’ve had from Safeway. For less than $7/#? Outstanding!

Dinner turned out to be a happy accident. I made Chana masala and as I had two eggs that needed using up I decided to add some hard boiled eggs. I use the residual heat method ; taking eggs straight from the fridge putting them in a pan of cold water & then bringing to the boil and then taking them off the heat and leaving them in the water for a specified length of time, depending on how soft or hard you want them. It always works. Link to method if anyone is interested.
However I thought that I knew the timings off the top of my head (I didn’t) also I used XL eggs this time rather than the usual medium. This resulted in very soft eggs that were a pain to peel. However the runny yolks mixing into the spicy chana masala was delicious, like an Indian shakshuka. I dotted some yoghurt on top and had chapatis alongside.
I find the flattened skins taste different than the crisp skin on the chicken itself - but I enjoy both now!
(By me, organic chicken runs about $20-30 whole, parts are a better buy most of the time.)

Pantry pasta: Last boxes of whole wheat and high protein spaghetti mixed finished with ramps (greens and thinly-sliced bulbs), green olives, canned artichoke (because that’s all I had), copious lemon juice and zest, Microplaned pecorino in the mix and big sheets added on at plating (not shown here). Lots of good olive oil and unsalted butter. Loosened up with pasta cooking water. Hit the spot.
Tonight was braised lima beans, cod poached in bacon-y Arrabiata sauce, quinoa-bulgur pilaf and green salad.

Accidentally amazing sausage and peppers tonight. I was being lazy and threw sliced red bells, minced garlic, some onions and frozen jalapeno cheddar sausages into a pan, put a lid on it and walked away. Came back every so often to stir it, but lost track of time and found it REALLY brown (read: blackened) toward the end. I splashed in some wine to deglaze and crossed my fingers. Luckily, it was just a hair shy of burnt and tasted fantastic with loads of parmesan.
Laziness for the win!
Multi-tasked like a superstar while I made an eggplant, shrimp, “pasta” pesto concoction while discussing a work issue on a call. The Italian side of me does better talking when I have something to do with my hands! Everyone ate it with gusto. I put the pasta in quotes because it is that Bamba brand. Chickpeas or garbanzos? It is good if you have a strong sauce. Otherwise it isn’t quite right for me. Kind of like how I can’t fully get on board with whole wheat pasta even though I try.
Have you tried red lentil pasta yet? It’s pretty good under sauce. Trader Joe’s carries it. Aldi has fussili as a special buy. I like that it keeps some bite.
No, but I will look for it next time I go! Thanks. We LOVE (with super big heart shaped eyes) pasta but I feel like I should make an effort to be more nutritious.

Is there a trick with the TJ lentil pasta? I didn’t enjoy the black bean version, though I think I should’ve given it a second shot, with a strong sauce.

The yellow lentil spaghetti one from TJs is good too, no serious “bean” flavor to it- and some crazy amount of protein and fiber. Maybe $3 for 12oz?

The red lentil penne kind and yellow lentil spaghetti are waaay better. Just careful not to overcook. No specific bean flavor to those like there is with the black bean one
When did my nephew get so tall?!?? We went EVERYWHERE- lots of citibiking! Although only on the west side highway and in central park since those are the safest routes (no traffic)
Not my only caffeine today but certainly the best looking (oat milk cortado)
After @meatn3 mentioned garlic knots i realized we would be nearby this afternoon! Biked part of central park to see the cherry blossom trees blooming and we all had a round of garlic knots :))
And my nephew tried one of these things which has basil, marinara and either a meatball or something chicken? Dunno
Wandered H Mart before dinner, he hadn’t really been in an all asian grocery before and was VERY into it! Picked up edible souvenirs including spicy ramen, anchovies and peanuts snacks, a few chips, and some black sesame instant drink
Tonight was at Madangsui for korean BBQ, met my bff there so there were three omnis. Kinda weird they had jalapeños in a few of the banchan- blew my head off cuz I didn’t realize it was a freaking jalapeño in one of the little pickled dishes!!
They did the bulgolgi and shrimp
And of course the scallion pancake thing
I got the soybean paste tofu stew I can’t remember the name of or pronounce. Was a bit more spicy that “oh no, not very spicy” that the waitress told me…!
Also way too close to patbingsu to not have it! We all just shared this one, hard to tell how huge it is here. Black sesame with strawberries, sweet red beans and mochi
Apparently we walked 7miles not including the biking…!

The whole adventure with your family looks like so much fun. And those garlic knots look even better than before, if that’s possible.
