What's for Dinner #44 - 04/2019 - the April Flowers but no Showers Edition

BF made us a snacky, salumi dinner, at my request, with some of the cured meats i got from our sadly closing deli (this is the last weekend!) - mortadella, spicy ham, cantimpalo, and lamb salami. all delish, especially the pan grilled zucchini and red peppers with anchovy. i could eat like this every night.

It was too much hassle back then :fearful:

The two sheet pans (actually eight pans, in the toaster oven) trick changed the game for me!

It was all about the olive oil tonight. Forgot to top the sliced ribeye with fresh sage .lol . Wine to drink. Cheers.

We fight for the crispy skin when there is a roasted chicken. Soft skin is less appealing, but never throw them out. (Soft duck skin is another story!)

There’s an old-school poultry shop in Cambridge MA that I ordered 1/2 lb. of chicken skins from as a treat for friends to go start our meal. They were going to charge me $1.50/lb., but just gave it to me when I got there. It think it’s time to revisit.

That bloody looks like a meal by itself! Yum!

I’ve been cooking in for fits and spurts between various house projects and lots of play dates. My daughter’s school was closed for a few days on spring break and the weather has been so nice here.

I made Easter dinner and brought it to my in-laws since my mil is recovering from surgery. I made buttermilk brined chicken for the grill, glazed carrots, roasted potatoes, cold asparagus with vinagarette and a big salad with apples and walnuts. My fil threw a ham in the oven too.

No pics of any food but here is one of the backyard looking fine!

Thanks. Work in progress (as with everything). I’m confident that as soon as we get it to where we are 100% happy than we will move!

Yes, we use them for BLTs in place of the bacon.

Growing up we never ate chicken skin, even on fried chicken. But Pakistani tastes have changed, skin is more common now.

True free range chicken, what we call desi murghi, is very expensive. We pay $23 per bird on average.

I love Mayflower poultry! It’s my go to place for turkeys for Thanksgiving too. That the guys who run/man this shop are great and so helpful, just makes it more awesome. I only wish it were closer to me. I bundle these together with trips to New Deal fish market across the street.

Me, too. I totally agree about the guys working there. The prices are great, too. The chicken feet and backs in the freezer for stock can’t be beat. And the proximity to New Deal and Courthouse Fish just add to the awesomeness. A throwback to another time.
