Some carnitas from the freezer, defrosted, heated up and crisped in a pan. With zucchini, pickled onions, and “Mexican rice” aka rice made in the rice cooker with a spoonful of chicken better than bouillon and a scoop of salsa from a jar mixed in the cooking water.

It was another late night last night so fired up the toaster oven for a quick dinner hummus crusted chicken with smoked paprika

Meeting with the department chair this afternoon to discuss mean girls…how did this become my life? :slight_smile: I hate drama, I imagine that’s why this is getting worse as I don’t indulge mean girl behavior. Sigh and deep breaths Stock pulled out of the freezer this morning for a hearty soup tonight.

I was just about to suggest something similar. My neighborhood dive in college was called “The Dugout” given its proximity to Fenway Park, but to those in the know it was “Le Du Gout” with proper French pronunciation, bien sur! (Who says we’re not classy here in Boston?!)

To keep this on the food-tip, to poor college students, the food was cheap and wasn’t half bad!

Agree! Unfortunately when you refuse to engage/respond to that behavior they often take it as weakness and intensify their efforts. Some days my dream job is sorting clothes hangers in a quiet room by my self…:thinking:

It seems so. I’ve avoided these two for months mostly because I just don’t see them since my office moved and thought “phew, it’s over.” My mistake, they were just brewing drama in a bigger pot.

Thanks! Hummus is hit or miss for me but last night it was a definite hit.

I’m a very strong introvert which few guess because I can be social and if not for med school loans, I would be more actively pursuing early retirement so I could stay in my house in peace.

You might like this idea. I put the ingredients together differently each time - sometimes I sub hummus for the peanut butter. It is easily adaptable and good on chicken and pork too.

I put a bit of energy into making my home an oasis for me. A lot of drama in the world that you have no control over so I choose to make my home be a place where the bs doesn’t intrude. Don’t let it get you down, it too will pass.

My home is definitely my sanctuary especially since buying a house last year and being able to make it exactly how I want it.

That’s what I tell myself and try to focus on what I can control and the positive things, there’s always something positive to focus on even if it’s small. If nothing else, every day ends with seeing my cats and, I hate to be the cat lady, but those pint size creatures can brighten any day.

I used to work in an upscale clothing store back in the day. The clothes all had to be steamed before being put out on the floor. I used to volunteer to stay in the back room and steam clothes all day. I’d have my radio on, and wouldn’t have to deal with people. It was great.

Chinese style dry fried green beans are seriously one of my top ten favorite foods of all time…!
In the winter i like to make a mug of miso broth (i ise white or yellow miso for this) to sip like a tea, if that appeals to you it’s certainly an easy way to add a lot of sodium to your day quickly ;))
Impressed you were baking this afternoon, that sounds like a tasty bread

That’s exactly how I feel about my townhouse I purchased 6+ years ago. I pull into the garage, close the door, and go “Ahhhh.”

Ditto again. I can be in a crappy mood, but being greeted with “FEED ME MEENOW!” and then getting cuddles later helps a lot.

I love miso, but Mr. SMT isn’t as fond of it sadly. Does mean I don’t make it for myself very much.

We had a mini birthday breakfast thing for the creative director today and because it wasn’t until 10:30am -aka most everyone ate breakfast already- there were a lot of leftovers, including the amazing bagels from Best Bagel :smile: i brought home a whole wheat everything and toasted half for an open face sandwich. Bagel shop guys always look at me like I’m insane but by favorite combo- and what i had on my open face half is: a thick layer of hummus, thin sliced onion, a few dill pickle slices, cucumber slices, (now press down firmly) and either sprouts or shredded lettuce. Tonight was just shredded lettuce.
Of course this is a disaster to try and eat as an open face sandwich, so i used a sharp knife and a fork because i live alone and there are no witnesses to make fun of me :wink: A bigger pile of shredded lettuce with some chopped cucumber and kimchi vinegrette on the side. Plus kombucha.

Anyone going to/from penn station this shop is the best closest really good bagel

Our dinner was supposed to use the big oven, but not today! Instead I made some roasted potatoes in a skillet, braised red cabbage with apples and cider vinegar and some sausages. The turkey breast was roasted in the little toaster oven for sandwiches all week long. Tomorrow, I will make some bread. The starter is “aging” now. Darn autocorrect won’t let me type the correct word!

I love the kitty scramble when I get home. Food, food, where is the food?!? I thought it was nice with one cat but the pair is definitely the best! I couldn’t even be upset when little thief swiped my chicken out of the pantry last night. I thought pantry was high enough to keep her away. I guess I need to close the door too!

The microwave is a handy spot to keep food safe from pets when you are keeping it at room temp for a bit.

My cat doesn’t dare to jump on the counter when I am around. But when we go to sleep, that’s another story. I use my oven to keep my dirty plates, if I have no time to wash it after the meal.

I used to do that then once forgot meal prep food in there overnight so switched approaches. I often put it on top of the fridge, she’s yet to figure that out but it’s only a matter of time.
