What's for Dinner #26 - 10/2017 - The Tastes of Fall Edition

Tonight was an old Italian-American favorite– chicken parmesan. As I have mentioned before, I don’t do the entire bake-in-sauce-make-it-soggy thing anymore. Sauté the chicken which has been dredged in flour, egg, and panko. Place on a rack over a sheet pan. Top with mozzarella and parmesan cheese and throw it under the broiler. The chicken stays crispy and the cheese melts just the right amount. Served with a bit of angel hair pasta. No one seems to have replenished the vegetable drawer, so we were lacking a green thing.

The grand-scallion has voted. Carrots, yes. Rutabaga, yes. Parsnips, are you trying to kill me? Leeks and onions, yes. And I want more salmon and I want to suck the lemons. There you have it. A 16 month old view of this food.

Too funny!! I generally love all vegetables, especially roasted ones yet somehow rutabegas and turnips are a rare no go for me. Parsnips taste like a sweet cousin to carrots so it’s funny those were a deal breaker!

A quick stop at my neighborhood whole foods for some fancy hard cider on my way home- they have a great selection of individual bottles- and i picked up one of those onion rolls from the bakery. Well, and one of those amazing gingery molasses vegan cookies that no one would know is vegan. Fantastic chewy texture. Totally ate half of that before i got home…
dinner was the onion bun toasted well with the leftover massaman curry over it. Cider on the side. The rest of the cookie will either be dessert or part of breakfast.

Longest day in a very long time. I’m still learning workplace politics and it’s proving to be emotionally exhausting. I needed some quiet time in the kitchen to zone out so decided on stuffed chicken to have something slightly involved to focus on. Stuffed chicken with broccoli, cheddar and cottage cheese. It hit the spot and I enjoyed some Netflix and insomnia. Looking forward to sleep tonight!

It looks good, the stuffed chicken.

I find cooking is a good therapy for stress (gardening too), and eating well helps to brighten a bit the mood.

Cooking and exercise are my go tos for stress. I had already done enough of the former so needed the latter. I’ve always wanted to enjoy gardening but can’t get into it. I think it’s because my mom insisted I help as a kid. Goal today is to put yesterday behind me and not dwell…more cooking coming up after this workout :slight_smile:

Bought home some take aways from a new burger place. The most exotic was the tuna burger, the “steak” was nearly raw with some shiso leaves… another one we liked the chili beef burger with a lemony hot sauce.

Late dinner since I had a late lunch @ the Grog in Newburyport with friends (medium-rare bacon cheeseburger and fries). So I picked up some large shrimp at Hannaford on the way home.

Seasoned with paprika, and sauteed in butter and wine with garlic. Added a bit of heavy cream at the end for a sauce.

Vigo Saffron yellow rice and broccoli and a glass of wine. Easy-peasy.

I’ve been doing Whole30 for a week now - so far, so good. No off plan eating nor any real temptation to do so, although I will say this has really opened my eyes to how much I depend on cheese for quick, easy snacks and to add flavor to basically any vegetable side. It’s a very good exercise to get me thinking outside that box! The no soy requirement is actually a bit more annoying to me - I make a lot of stirfry type meals and nearly always use soy sauce and/or miso in the sauce.

Anyway, my last few dinners have been a sweet potato and sausage curry with coconut milk, egg salad with homemade bacon fat mayonnaise in bell pepper halves and flap steak kebabs (cumin, coriander, garlic, smoked paprika and lemon marinade) with tahini roasted broccoli. Unfortunately, I’m not noticing a huge improvement in my reflux, but these things sometimes take time, so I’ll stick it out for the 30 days at least.

No pictures again. Best friend from high school and her husband came to dinner tonight. We had planned to meet at a restaurant, but instead decided, cooking at home was the best option. She came up from Tiverton, RI stopping at her favorite fishmonger for some swordfish. I made some potatoes and asparagus. We both contributed fresh tomatoes.

The swordfish was grilled, as we prefer. The Yukon potatoes were steamed, cooled, and then cut into chunks. When the fire was started, the potatoes went into a hot sauté pan with enough butter and began their crisping. When enough of the edges were brown, I threw the pan into the oven. Half an Iggy’s baguette went in as well. Sliced three tomatoes. And outside, he grilled the asparagus.

It was a wonderful dinner. Much better than sitting in a noisy restaurant, with, if I may say so, much better food. Since she lives in St. Paul, I don’t see this friend often enough. Sitting around our table is the best way to visit.

I found gorgeous carrots again and then this recipe i had saved a while back with lentils and zaatar. I used veg stock, swapped in french green lentils since i have a bizarre amount of them in my cupboard, and used some coarse chopped fancy olives since feta is not my friend.
I was surprised at how good this was! The zaatar is definitely the star here. I’ll probably have the leftovers for breakfast with a blog of yogurt.

I made a new batch of new mom nursing energy balls for my friend using dried apricots, oats, chia seeds, cashews, peanut butter and coconut oil. My taster ball will be dessert with tea.

After a week of unprecedented mild mid autumn weather it finally ended on Friday night. The warmest in over 90 years. At 25 degrees Celsius it was warmer and nicer than most days last summer. Crazy! Now even the middle of the day it is dark as night, almost. The worst is coming soon. It never fails. But until then I make the most of what I have got because sometimes the weather is so horrible I can’t go to the market.

Mine, all mine. Partner had a whole haddock which was roasted in the oven.

First time eating meat in 10 days.

Farmers would appreciate me and the partner a lot if they knew how much we like vegs. I just hate things like leeks and spring onions. Under the meat is pureed swede with some butter in it.

Look like corn, don’t they? I pureed a small butternut for these dumplings. Made a big batch, enough for a couple more meals. Next time I will use another type of pumpkin.

Roasted chicken, roasted potatoes, and steamed green beans. Wine.

Outlander’s S3:E6 reunion that EVERYONE has been waiting for starts momentarily. At least everyone who are fans of Jamie and Claire. :slight_smile:

Very late lunch today, we were waiting for some friends who were very late because of some traffic problems. My best friend in law was being helpful manning the grill, there were bell peppers, scallions, jalapenos, zucchini, some extra firm tofu for me, and not sure exactly what fish it was for the omni protein.
I helped make some garlicy black beans, pico de gallo, a green salad with pumpkin seeds and cilantro,cucumber, cherry tomatoes and a lime vinegrette. We chopped the roasted veggies to taco size. Corn/flour tortillas were charred at the last minute. There were bowls of sour cream, pickled jalapenos, and fresh cilantro on the table and we all just made our own tacos at the table. The missing avocado was due to the lack of planning in advance, store only had rock hard ones and i refuse to purchase premade guacamole on principle. (I grew up in CA and believe that it is a Crime Against Avocado)
I also had a bit more rose than one should before eating…!

Not especially hungry for dinner, but wanted something, made a snacky plate of sorts with sugar snap peas and edamame hummus, a batch of kombu celery, sliced smoked tofu, and a few thick seedy crackers. Side of kombucha.

That is how our day went as well. I made Sunday lunch which looks strangely like a brunch. We both had bacon and soft scrambled eggs. He had 8 pancakes (buttermilk) and I had a slice of home made oatmeal bread toast. So dinner? Neither of us were particularly hungry at 7PM. So I toasted the rest of last night’s baguette and we munched on bread and cheese. that leaves some chicken cutlets [Friday] and potatoes [last night] for our lunch with the grand-scallion tomorrow.

[Who knew that leftover Irish Oatmeal could make such a delicious bread?]
