Tried a new to me frozen convenience product from my local grocery store. Pinsa, 'twas pretty good for frozen, I did embellish it with some roasted garlic oil and showered it with Parm/Regg. $10.99 and it’s big enough for 2 meals, would buy again if it goes on sale but my local pizza joint has a way better deal for $10.99. Side salad for health.
I was a busy lil Hausfrau today — tryna keep up with the cat hair is an endless exercise in futility
, but I also reheated, then strained the wonderfully gelatinous chicken stock I made Sunday eve to stock away
in the freezer below. There was such a thin fat layer on top after cooling in the fridge I didn’t bother skimming it. Fat is flavor, after all.
I also roasted a 1.5lbs of mini peppers with olive oil, sea salt, RPF & a splash of white wine vinegar, inspired by a friend’s recent post in my Fb WFD group.
I threw in the last of the 2 “hot-but-yer-lying-bruh” hallapeenos to add those alongside a trio of sliced mini peppers, providing kronch for the chicken tacos I made with seasoned (cumin, smoked paprika, Penzey’s Northwoods) roti chicken. Es Taco Toozday, cabrones

Made a quick 2-avocado guac with lotsa toasted cumin, lime juice, habanero sauce, very finely diced shallot, and a buncha Sinatra (of course!) to go with a handful of tortilla chips before the main event.
My PIC supplied his mahvellous margaritas as aperitivos (and likely digestivos as well).
Not too shabby for a Tuesday.
Pasta salad with bowties, garden spinach, bacon, mushrooms, walnuts, shallots, parm, and leftover Amalfi chicken. Tossed in a standard vinaigrette, and leftover lemon-chicken sauce passed on the side. Good stuff.
“Es Taco Toozday” here too. Cod with cabbage slaw and chipotle tartar sauce. Bread and butter jalapenos with carrot and onion. Sangria.
I had a lot of uncooked tomato braising liquid from last weekend’s lamb shank, so I turned it into a mixed seafood pasta e fagioli. Chowder chunkfish, shrimp, bay scallops, great northern beans. I don’t know what these pasta shapes are called–I repacked them and didn’t save the box. Little and flat, fluted edges, like mini lasagna noodles.
And? How’d they turn out?
Chicken Breast with Bell Peppers - chicken breasts are quickly seared. Red, green and yellow bell peppers, scallions and peas are sautéed and briefly cooked in vegetable broth and some heavy cream. The vegetables mixture is poured into a casserole dish and topped with chicken breasts. Each chicken breast is covered with a cream cheese-milk-smoked paprika mix and topped with grated cheddar. Finished in the oven for 15 minutes and topped with some crispy bacon
Fine! I could’ve upped the ramps some, but the spaetzle was (to me) indistinguishable from others I’ve made.

Tonight I made harissa-roasted salmon with burrata-corn ravioli Primavera. The kiddo was, weirdly, not down with the ravioli themselves. They were sauced with a beurre blanc @Zoeliculious shared, fresh basil, Grana Padano, and individually sauteed baby zucchini, haricots, snow peas, asparagus, grape tomatoes, and roasted red pepper strips. Hit the spot!
Tonight’s dinner was hot sesame noodles with scallions and pork. I was out of tahini that was called for in the recipe so I guess I will be adding it to my ever growing grocery list.
A muggy, kinda ridic warm day here in the hi 70s, but I guess it beats having a hailstorm like last year, as my Fb memories kindly reminded me.
We hit the gym for the first time in too many days & had a good workout. Obviously, I still can’t do much of any upper body work, but legs are fair game.
Crawled home, made myself a fine lunch taco with the leftover fixins from last night, hit the shower….. when it suddenly struck me like lightning that I was supposed to pick up one of my clients at 2pm, and it was 1:45pm when I remembered, all soaped up!! Yikes!!!

Thankfully, the lady is very chill & didn’t mind waiting a few minutes, and I srsly got ready and out there in record time
We picked up a bunch of booze for her, too, that I helped get into her swanky abode at the retirement village.
What with the summery temps n ‘at my PIC and I decided to grab a HH brewski at the beer garden: Italian unfiltered Pilsner for me, Altbier for him (BLASPHEMOUS!!!).
Dinner was leftover mapo doufu & rice from Monday, plus my PIC’s addictive baby bok choy
for which I chopped/smashed TPSTOGAG.
I finished the last of the smacked cuke salad as my app, which had gotten pretty damn spicy over the last 24 hours.
