I just used the brine from a block of feta, some pre-made Greek seasoning, pepper, and bay leaves. I added enough water to cover. Honestly, I brined them a couple of days and then drained, rinsing them them lightly. They were in the fridge a couple of days more before I managed to cook them and had exuded more liquid in the storage container. I started them in a cold skillet and cooked to around 150° and they were overdone/dry for my tastes. I don’t think the extra time being seasoned necessarily helped. Still decent.

Before you all start in on comparisons with how cold it is and how much snow where you are, I’m not shortchanging that..but we are simply not equipped to deal with it.
We have no plows, we have no salt trucks. The utility lines are not hung with enough slack in them to allow for that much contraction, so there will be broken power lines everywhere. Our usual heat pumps that work well into the forties don’t work well at all below freezing, so we’ll all be on emergency heat, which will cause rolling blackouts.
The texture on that rice looks great. Basmati?

Black cod and chips. The fish didn’t quite work out–the coating didn’t crisp up. I used a batter, with egg, so it was kind of like wrapped in a pancake. Tasty, though, and nice flaky texture.
