What's for Dinner #125 - the Fresh Start Edition - January 2026

Judging from what I’ve witnessed at many playgrounds, kids seem to get plenty of sand in their diet.

Same here… Moms always know best.

To this day, I still call my Mom up and ask – How do I prepare (fill in the blank) and she always knows.

Inspired by @linguafood and others – tonight’s dinner was another experiment. It was a Lemon, Cream Cheese, Pesto Pasta. I thinned a block of cream cheese in some milk, added some pesto and two teaspoons of lemon juice, then poured it over some pasta shells. It was actually quite good, although I’ll use three teaspoons of lemon juice next time, just to give it a bit more flavor.

I was on the fence about cooking and slicing a bratwurst (from the freezer), so there would be a little meat in this dish. I didn’t and should have – so I’ll correct that next time, as well.

Today’s Adventures in Sourdough Discard led me to make English muffins, which I did not think was possible for a lay person, but apparently it is!

I slapped an egg, potato and cheese on one of those bad boys.

And then, because I am MADE OF MONEY, I had some soba with ginger scallion sauce. (Scallions are either $1 or $2/bunch here, and have been forever).

SALAD for me, and friend/neighbor brought us some of her lasagna. Very tender, so it was good for the BF’s dental issues, although the carrots in it kind of threw us off. Still, so kind of her, much appreciated as I had to work late. BF made a little olive dressing for leftover roasted potatoes we had, which were quite yummy.

Have you ever tried a stroopwafels? it’s a Dutch wafer cookie filled with syrup, that many people place on top of their cup or mug of hot tea or coffee, to warm the cookie before eating. The steam warms the syrup, in the cookie, making it gooey. A hot drink ritual for some people

Oh absolutely! They were the first thing I’d get at the train station when I landed in Amsterdam for work.

The Aldi ones are really good.
