BF whipped this up from leftovers of Chinese rice noodle soup and last night’s gyudon, plus some crispy fried, S&P tofu squares. Chili crisp on top.

Last of the homemade freezer burgers.
Orange cheese, pickle, tomato, purple onion, Hellman’s, Dijon on some baguette(not the ideal vessel for burgers, but that’s all I had and I wasn’t about to buy 4-8 more buns just for this one burger).
Messy, yes… delicious, also yes.

Had greens (pan di zucchero/Sugarloaf chicory) and cherry tomatoes that desperately needed to be used, plus some fresh merguez from the posh butcher. Sliced the greens and sauté-steamed them with olive oil, tons of garlic, a bit of soy and Red Boat, then tossed with drained cannellini beans, topped with cherry tomatoes and a drizzle of olive oil and into a 350 oven. After 20 minutes added the merguez rubbed with a bit of olive oil and back into oven for another 15 minutes. Super delicious, low effort dinner. I only ate 1 (2 oz) merguez so boatloads of leftovers.

Got two pecks of beans today before heading to the DMV, as I am due for a new license. Place was packed, so I made a swift U-turn and picked up my first rider in well over a year. I’ve really missed driving, so hopefully I can keep going.

Our HK buddy’s freshly minted bride returned from her romantic getaway & invited me over for a glass of wine, bc she picked up a pair of tights on her trip for me. So sweet! I also scored some more Thai basil and lemongrass from her garden :blush:

Another friend joined us, her garden basil in hand for our dinner tonight — a pivot from my OG plan to make gan bian si ji dou, which is now postponed to Thursday.

Instead, we had TJ’s ricotta & sweet corn ravs with a creamy corn & heirloom tomato sauce,

along with another burrata & avocado Caprese with more of those beautiful FM gems.

Gotta take advantage of the last of the season!

I rendered 3 slices of Aldi’s useless bacon, removed most of the fat & the few meaty bits the stuff provides, then added a glug of olive oil. Sautéed Thai bird peppers (only two this time), 1.5 small shallots & 2 crushed garlic cloves, added the tomatoes and a splash of rosé, then added the corn stock and reduced it by half. The corn went in last, light cream &s lotsa chopped basil to finish.

I’d taken care of my mise (little as there was) before the wine date, just in case…. :smile:

Not to toot my own horn, but that was one Tasty Tuesday dinner :yum:

I prepped and DH executed while I worked out: Frenched pork chops with shish kebab seasoning, buttered broccoli, and quinoa and chickpeas with oo and TJ’s aglio e olio seasoning. DH went rogue and grilled peaches with cinnamon and plant butter. Worked!

Shared the chop with our kiddo.

I was going to make a burger and then I decided I didn’t want a bun, so I just made a bunless burger. 50/50 beef and pork seasoned with Maldon hickory smoked salt and pepper, seared in the cast iron with bacon, avocado and cambozola. Little gem and green leaf salad, red onion, celery, pickled beets, mushrooms and honey mustard dressing.

The BF followed a Chef John recipe for Salisbury steak made with ground chicken. Why this needed to be done, we’re not sure, but we do love his beef version, so we thought we’d try it. Probably could have been a better texture if we’d actually ground our own chicken thighs, but we used the pre-ground breast stuff from TJ’s. As for the gravy, it would have been great if the recipe hadn’t called for lemon juice - something the BF railed against but then he added it anyway. on its own, the gravy was too tart, although once the sauteed crimini shrooms and the chicken patties went in, the flavors mellowed and it actually all worked. Especially over the BF’s buttery mashed potatoes. Overall, good, but at least in this dish, chicken won’t be a replacement for beef in the future.

A potato-based seafood chowder, with junkfish (“chowder bits”), shrimp, calamari, bay scallops, clams. Lots of lemon. Topped with bacon bits and a sprinkle of feta. The color is probably from the smoked paprika.

Chicken strips and cauliflower with honey mustard dressing. All I could muster after demo and plumbers all day. Everyone’s meals look so delicious. I’m envious.
