It was an absolute stunner of a day: warm, but not too warm, blue skies, zero humidity. Perfect for move-in day, which I’d kinda blanked one when we made plans to introduce a couple of friends to our favorite taco place in town, which is located near the worst parking lot downtown & surrounded by student housing. We cheated and took the Vespa, otherwise we would’ve circled along a wall of cars as they had to. They finally were able to join us & loved the food. Yay!
The fabulous weather combined with move-in weekend was likely also the reason for how busy the brewery was for our gig
I wasn’t interested in the fish fry or chowder on offer from the food truck & generally don’t eat a big meal before a show, so I was pretty hungry by the time we got home around 10pm.
An old buddy who moved to VA many years ago with his fam was up our way to hang and catch up with other friends, and he’d asked to crash with us. He’s friends with our bassist, so he came over for a nightcap as well.
We made up TJ’s Alsatian tart we had in the freezer to share, after which my PIC was still hangry… yet he refused to have any of several leftovers in the fridge “in front of our guests” (who, btw, weren’t hungry anymore and couldn’t possibly have been less offended by this ). So he unsuccessfully tried to order pizza or wings or what have you, which was entirely impossible. Did I mention it’s move-in weekend?
He went to bed grumbling and grumpy, and our buddy and I hung out a bit later and caught up.
Good news for my PIC: we’re invited to a good friend’s retirement (surprise) party tonight, where there will be ample amounts of Indian food.
I also see possible BLTs on the horizon for lunch…yeah, I woke up hungry
PEC on a roll, shoestring fries, catsup everywhere… Only ate half of the sangweech.
Gratuitous photo of my niece’s new kitty, Eno(aka monkey boi). Had a meet & greet yesterday, such a handsome fella
I made Jamie Oliver’s gochujang chicken noodle traybake tonight. The chicken was marinated for a few days ahead of time and I omitted the red wine vinegar and subbed Napa cabbage for his point cabbage. Pretty tasty; would add the noodles a bit later to avoid overcooking. When he makes this on his show he fully coats the cabbage wedges in gochujang, and I would do that next time. I also wanted everything crispier, so probably higher temp the whole time. Heirloom tomatoes and cucumbers in chili crisp Sichuan vinaigrette and roasted haricots on the side; strawberries and hot fudge for dessert.
Lightly salted sea scallops pan-seared in a hot pan in olive oil and butter. Removed, and white wine and lemon juice added and reduced.
Served on leftover Israeli couscous with the lemon-wine drizzle, asparagus alongside, with a toasted Panko crumb, lemon zest, freshly ground pepper, roasted garlic and minced parsley gremolata sprinkled over all.
My house-sitter left some stuff when she moved back to her own apartment. A gallon jug of decaf Crystal Light ice tea. Body wash from Lidl. And a bag of Target house brand frozen vegetables. I hate waste, but the ice tea’s going down the drain. I’m trying to acclimate to the body wash (I vastly prefer bar soap). I did manage to repurpose the vegetables.
