What's for Dinner #121 - the End of Vacation/Start of School Shopping Month Edition - August 2025

I mean… haricots verts are usually not something I get excited about. So, that’s saying a LOT.

Oh, to have friends who enjoy food, instead of a bunch of vegans, vegetarians, gluten frees, non drinkers. I don’t eat with my friends. It’s such a missed opportunity. I’m so glad my family is generally up for food adventures.

We are lucky that the majority of our friends enjoy food, drink & merriment as much as we do.

Probz one of many reasons we’re friends

Tonight’s dinner was a corn salad with tomato, cucumber, radishes, jalapeño, and basil. It was like summer on a plate.

Blue cheese burger topped with shiitakes sautéed with Maggi sauce and finished with butter. I also added some shallot spread (Stonewall Kitchen) and mayo to the buns. And tater tots. Because tots. They were delicious with the condiments and cheese that tried to escape the burger!

Hate when that happens.

I would really enjoy that now!

That looks like Cascatelli – despite the menu description!

Back to my Friday night standard dinner.

Steak tip (just a wee bit closer to rare than I usually prefer, but it was still great) with a drizzle of Ballymaloe steak sauce; half a baked tater with TPSTOB&SC with chives; leftover reheated green beans.

There was wine.

Pan-roasted chicken thighs. Leftover Irish champ. A chopped salad of garden veg with a charred scallion dressing.

Yes, it does look like cascatelli, but it was handmade radiatori pasta. The 3rd pasta picture looks closer to a radiatori.

Chile relleno and tostados. Poblano pepper was stuffed with pepper jack, whipped egg white and yoke batter poured over and roasted in a mini loaf pan. Taco sauce and cotija cheese. Tostados were black beans, lettuce, seasoned ground beef, pico with avocado and sharp cheddar. Excellent Tuscan cantaloupe. There was a Margarita.

Mrs. P made her famous blackened shrimp salad with a Cajun dry rub. It was on a bed of arugula and included fresh strawberries, blueberries, figs, basil, roasted mini peppers, toasted pine nuts, sautéed red onions. It was drizzled with balsamic reduction and topped with fresh shaved parmigiano reggiano cheese after taking the picture. It went great with an excellent cabernet. We started off with homemade guac and an espresso martini (not pictured). Adding a gratuitous picture of our baby :dog:

I donated blood today and just didn’t have the energy to cook a big meal. So it was “Breakfast for Dinner” – Blueberry pancakes.

And I got to use up one of the two (sale) packs of blueberries.

Potato-Kohlrabi Casserole with Kasseler - a very old fashioned German dinner (but good comfort food) by a recipe from a ~25 year old German cooking magazine. Sliced boiled potatoes, sliced poached kohlrabi, kasseler (cured and smoked pork loin) and bechamel sauce (flour, vegetable broth, milk, cream cheese, nutmeg) are mixed, topped with grated gouda and baked in the oven

Looks great. I’ve never tried this.

I’ve had Kasseler, but not in a casserole/ auflauf.
