OK we have a theme here: tapas. Although I was mentally labeling mine desperation dinner™. Third week of half my team out on well-deserved vacation and all I am capable of is slicing and assembling. Nueske’s smoked duck breast and crostini from the freezer to the rescue. TJ’s toum in the middle.
FB Memories from 2022 helped me decide what tonight’s dinner was going to be. And I guess THAT dinner post was from an earlier FB dinner post. What can I say? I’m easily influenced.
Two BISO chicken thighs were skinned, deboned, seasoned with s/p, sautéed in olive oil, and set aside.
The 4 lone tomatoes I grew on my deck were chopped, and I added a regular sized vine tomato from the stupidmarket.
Tomatoes were sautéed in olive oil, adding freshly minced thyme, Aleppo pepper, and a pinch of salt; then 1/4 cup of white wine, 1/3 cup half-and-half, and a large Tbsp of Greek yogurt were added to sauce it up, along with some crumbled feta.
A large handful of baby spinach added at the end, then the chicken and cooked campagnelle pasta.
Plated, with a basil chiffonade and a sprinkle of additional feta. Not too bad!
Too hot to cook, so I went with a pimiento cheese type dip, spiked with habanero salsa. Tortilla chips on the side. Sauvignon Blanc for me and IPA for him.

Tonight’s dinner was a pork and green bean stirfry. The pork and hot sauce were purchased at the farmers market and the beans were from my CSA. (The rice and milk were from the grocery store. )
All the musicians who participated in last weekend’s benefit got an email today: they raised a total of $6,000. Yay! So glad we could be a part of it, as it is an issue very close to my heart
As for dinner, most of my original cooking plans for this week went by the wayside due to spontaneously making alternate plans — which is why I usually don’t plan too far ahead. That said, ever since I dipped my toes in this thread I’ve found it helpful for checking back to see what I thought I might make, or if I forgot what I had planned
Tonight was supposed to be shrimp tacos, but instead I decided to gather a group of 14 chile heads & other assorted friends to visit the newish Indian restaurant in town. The owner also runs the Detroit-style pizza place, and when I grabbed our pies for my movie night last week they asked if I could show them some love. I think I mentioned elsewhere here that running a restaurant successfully is tricky in this town: 2/3 of the population leaves for the summer, well-trained staff is almost impossible to find — especially since most students here don’t seem to need the money, like, at all — and the rents downtown are insane.
In any event, I’m really glad the dude reminded me of the place’s existence, bc we’d only gone once right after they opened, and I’d kinda blanked on it since.
Instead of ordering for the table, everyone ordered their ‘own’ dish but was happy to share, and I also got two dosas for the table to share that were meant to be our app, but that arrived pretty late in the game. They were delicious, although the one with a carrot/potato soup side was a little awkward to eat.
My dude and I shared their fab baingan bharta & a pleasantly hot goat curry.
Other orders were saag paneer, lamb korma,
onion kulcha (aMAZing, will have to get an order of that next time), LOTS of garlic naan,
okra, chicken tikka,
a shrimp dish, etc. etc. Rice was delightful as well.
Everyone was happy, which made me happy. The a/c was also not cranked to the max, so I didn’t even need the jacket I brought.
Tonight’s dinner was tuna cakes, lemon garlic butter shrimp and scallops, tomato curry, jasmine rice, apricot coconut curry beans, and corn on the cob.
Coffee ice cream with chocolate sauce for the DCs.
We liked the tomato curry. I’ll make it again. I had to make a few substitutions and omissions, as I couldn’t find my curry leaves, I was out of tamarind paste. I used yellow mustard seeds since I don’t have black mustard seeds.
90-degrees in the shade today. We got our outdoor activities and chores done by 10:00 AM. Spent the rest of the day inside eating ice cream and doing what-not.
WFD is Sichuan green bean stir-fry with ground pork over white rice. Homemade chili crisp.

Taco Tuesday. Chicken mole with onion and Hatch chile, salsa verde, cotija cheese. Corn salad, sweet onion, tomatoes, avocado, cilantro, oo & lime juice.
Originally, I had Tuna Noodle Casserole planned for tonight’s dinner, but my day had other plans. So, I shifted gears and made Tuna Cheese Hot Pockets. I didn’t hear any complaints and I still used tuna, so I guess everyone was happy with dinner. (LOL)
Baked Potatoes and beets were the sides.
I’ll try to put Tuna Noodle casserole back on the menu for next week. I really want to try the “Chicken of the Sea” recipe I found on-line.

Lentil-Feta Frikadellen with Creamed Mushrooms - frikadellen are made with cooked and drained red lentils, onions, garlic, thyme, feta, egg and breadcrumbs and afterwards pan seared. Button mushrooms are sautéed and cooked with onions, white wine and heavy cream. Finished with some parsley
