I use a $20 OXO after destroying my Thermapen. It’s not quite as fast but totally sufficient for my needs. I don’t need more $70+ small tools to destroy

Thanks for the feedback about Oxo. I have an Oxo cheese grater and an Oxo salad spinner that I’ve had for nearly 30 years and have served me well. I’m not sure how much cheaper/more expensive they would be compared to other brands since they were both gifts but if Oxo makes thermometers I will definitely have to look into it.
Their replacement/warranty policies cannot be beat!
I think anyone “of a certain age” grew up with exactly that tuna noodle casserole recipe. I made it several years ago after a craving hit. And realized I don’t need to follow that craving anymore. LOL
I will, however, continue to follow my maybe once-a-year craving for hamburger stroganoff, which I got from the old Betty Crocker recipe cards in a lime green recipe card box. (I got rid of the box and all recipe cards a long time ago, except maybe 3-4, including the Hamburger Stroganoff - which I adapted to use fresh vs. canned mushrooms and red wine and a LOT less cream of mush soup).
Weirdly, tuna noodle casserole was something my mom never made. The first time I remember having it was after I graduated college and a buddy invited some of us over for dinner.
The tricky thing with tuna casserole is that since the tuna is already well cooked, more time in the oven rarely does it favors. The Teigen recipe tries to get around that with the liberal use of jalapeño peppers (in the casserole and as the flavoring for the potato chips), which serves to distract from the overcooked tuna. I think I also used the Cabot bacon cheddar when I made it. Bacon helps everything!

Dinner tonight was chicken and zucchini stirfry. The only omission I made was the chicken stock/flour slurry since I didn’t want my dish too saucy and I started sautéing the zucchini a little earlier than called for since I like mine a little on the well cooked side.
Everyone ate and enjoyed this meal!
Salsa Verde chicken (+ canned seasoned black beans; chicken tenders marinated in olive oil and Badia Adobo seasoning and cumin) over hominy with refried beans tamale bake (made that up), leftover Brussels slaw, and seared zucchini with fresh dill.
Used this roasted tomatillo salsa:
Mac and cheese (stovetop with spinach, shallots, garlic, Jarlsberg, and cheddar) and baked sole fillets topped with garlic parmesan bread panko crumbs.
I’m home alone tonight, so I just made some potato skins. Bbq chicken and mushrooms, cheese, red onion, cilantro and the last of a tomato from earlier. I normally do some Caesar dressing after they come out of the oven but didn’t have any. Sour cream instead. Delish and quick.

After I spent almost an entire hour yesterday cleaning the entrance way floorboards from the dust and dirt of over a decade, my PIC painted them and the walls today. It’s the smallest room in the house, thankfully, and most of the other floorboards in the house are in good shape. Meanwhile, I dusted off Things That Don’t Get Dusted Off Enough. More window cleaning and decluttering tomorrow
We caught an early evening showing of Weapons with a friend, then picked up 2 small Detroit-style πs (Silly Dilly & Triple Threat) en route home for our dinner together over which we discussed the movie. Loved it.
