Unfortunately I’m a night person and stay up till about 2am. That whole “don’t eat after X o’clock” is a lot of nonsense anyway.
Tonight’s dinner started with a salad of arugula, orange pepper and avocado. Then I had spaghetti with a no-cook tomato sauce: chopped tomato, garlic, capers and evoo then topped with goat cheese.
Speaking of dieting and intermittent fasting, any food eaten between midnight and 2am doesn’t count, right? Couldn’t control my urges and ate lemon Oreos, Tillamook ice-cream, reduced sodium Fritos with Ortega taco sauce, and then four taquitos to use up the rest of taco sauce. Listed it all on my diet tracking app, looked at the sodium numbers, then deleted it and forgave myself. Today is another day.
I was diagnosed with stage 4 kidney disease in February and started on a strict diet that monitors my protein, sodium, potassium etc. I decided to also try and lose weight and stopped drinking because it could only help, right? I use an app and list my food every day as well as other health numbers and it has helped me drop 38 lbs. I am now at stage 3 of CKD so don’t believe anyone that tells you that your kidneys cant improve their function.
Tonight’s dinner was a rerun of the Boursin Mushroom pasta. Was it as good as the first time? Why, yes, it was.

No pictures, but we got take out from a new-ish Vietnamese place - cold cut bahn mi for me and the restaurant’s take on hot Nashville chicken bahn mi for him. We split an order of spring rolls. Everything was very good and I am psyched they are just down the road from us now!
Seared and roasted biso chicken thigh, splash of wine and parsley pan sauce. Fresh corn, onion, Hatch chile, sweet cherry pepper sauteed in the ci skillet with lots of butter. Haricots verts and Gold Nuggets from the garden with grape tomatoes, basil, oo&v, shallot, garlic, mustard dressing.

Um, no, for those of us who have GERD. I can’t eat after around 8PM or so.

Husband is out of town and I made chicken thighs! A NYT recipe with hot honey and lime.

Pasta Salad with Shrimps and Beans - shrimps were marinated for a few hours in a mixture of rosemary, thyme, garlic and olive oil and then quickly seared. Mixed with orecchiette, green and yellow beans, grated parmesan, fresh mint, lemon juice (from a pan seared lemon) and olive oil
And corn!
Inspired! I have some ground chicken in the freezer and this is an appealing reason to use it.

It was very good and quite easy. Recommend. I added some smoked paprika and subbed low-sodium seasoned salt for some of the regular.

I’m still on the hunt for some. A farm in my region makes these Thai chicken meatballs that I was thinking of replicating, but so far I haven’t been moved to do that.
