You can use ground chicken in this fabulous laab recipe that calls for turkey. I doubt it matters, really, as the sauce will sing regardless.
Those are great flavor combinations. I’ve made this one, which seems similar. My changes:
I also add scallion, lemongrass, cilantro, garlic, and a little lime zest to the meatball mix. We usually use ground chicken instead of pork.

The NYT Dumpling and Tomato Salad with some Bibimgo mini wontons and cilantro instead of basil. I also added some leftover mushrooms that needed to be finished up.
This popped up on my Facebook Memories a couple of days ago. Good timing since I had recently picked up the smallest head of green cabbage I could find. I subbed 3/4 lb of ground lamb instead of beef, and a large handful of chives instead of green onions.
Just as good as I remembered, if not better with the ground lamb. The rest of the bottle of the French chardonnay from last weekend was the libation.
And today was the 2-year anniversary of the 3-4 foot flood from tons of rain at my old office space. THAT seems like it was a lot longer ago.
We enjoyed another excellent dinner at F1rst Restaurant in Hawthorne, NJ, including a grilled pork chop with warm crispy potato-bacon-shallot salad, Brussel sprout vegetable slaw, peach whole grain mostarda; halibut with pureed cauliflower and a chardonnay beurre blanc; octopus, and fried calamari and artichokes. It all went great with a couple of excellent cabernets.

Frikadelle with Cucumber-Kohlrabi Salad - frikadellen were made with ground beef (why can’t you buy premixed ground beef and pork in the US like you would use in Germany), seared onions, parsley, marjoram, eggs, yoghurt and mustard. The salad is thinly cut cucumber and kohlrabi with a yoghurt dressing (with milk, white wine vinegar, parsley and a hint of sugar)
My Kroger owned grocery store has it.
