When my PIC and I were leaving the house this AM, the Vespa wouldn’t start up. I dropped him off on campus and went to my appointment.
Great way to start the week . It’s a brand-new scooter, and charging the battery (which shouldn’t be low in any event) did absolutely nada. Good thing we still have a warranty on it, and the dealer will hopefully be picking it up at our house soon — the shop is 45 min away. Should be an interesting few days with being back to one car.
Dinner was supposed to be takeout sushi, but most of our favorite fish was sold out already (deliveries get in on Thursdays), so we pivoted to a lil dumpling sampler & my favorite bok choy courtesy of my boo. Mini XLB with black vinegar & fresh ginger, beef & green onion dumplings & har gao with a dumpling sauce from WoL.
Creamy Tuscan chicken. This recipe popped up in his news feed today and we decided to give it a shot. Brown chicken breasts dusted with oregano, s&p in olive oil. Remove. Add garlic, chopped tomatoes and a little butter. Then in goes baby spinach and cream/parm. More cream/parm needed which I did add. Served over smallish portions of angel hair to soak up the sauce. Good enough but nothing to repeat. Just being honest here!
WFD tonight was a Greek-ish smorgasbord to take advantage of what we had on hand.
Pan-fried chicken breast pieces which were marinated in yogurt, olive oil, lemon juice, garlic, and oregano. Leftover cinnamon-and-cumin-spiced lamb meatballs. Homemade pita. Raita. Greek salad with marinated olives and feta in a a creamy vinaigrette.
Today was use up bits and pieces day. Cream chicken over Pillsbury biscuits. Leeks, garlic, celery, carrot from the veg bin were sauteed in butter, flour added and then chicken broth. When everything was nice and hot added peas and corn from the freezer, shredded chicken from the stock I made Saturday. Finished with cream and parsley. Sliced tomato from the garden.

Yes, except I shallow fried in a non-stick skillet. I’m curious whether that step could be omitted – I think it would need to be a quite firm fish in order to work.
Had lunch with the fam today, we grabbed some takeaway from our favorite and best shawarma/falafel joint in the city. I had the falafel plate, very generous portion so lots came home with me.
We also had some baklawa and maple walnut ice cream. I made a couple of mini falafel pita for dinner, stuffed with the accoutrements that came with the plate. Good eats!
Improvised dinner of black beans, par cooked in the Instapot and finished on the stovetop with tomato, habanero, onion, and garlic. Rice pilaf, cilantro, cotija, sour cream, and lime to round things out.
I made Meera Sodha’s Gujarati potato and cabbage curry with green chili and spicy tomato chutneys and raita with mint and cumin seed. Served with ww paratha from the Indian market.
Taco Tuesday made with grilled chicken thighs. I grill a large pack every other week or so. They are great in so many things. I came across chicken broth in the freezer. I feel tortilla soup coming on.
Since it’s just me most od the time, bowls have become my goto.
Tonight is salmon over sauteed squash and tomatoes over a blend of brown rice and quinoa, with a chopped slaw at the bottom. A little vinaigrette and done.
Pizza night. ATK’s crust with homemade pesto, parm, whole milk mozz, and garden tomatoes (the latter added after baking). Leafy greens in vinaigrette, with kalamata olives on the side.
ETA: power outage! Managed to have the pizza baked before it hit, but missed getting the kettle on for tea.
