Yes there was . Had some friends over . Chicken Boudin with scallions. And a veggie garden pizza. To distracted to take pictures.

These colors look so harmonious. Like the best kind of still life and a delicious meal all rolled into one.

I cannot find yu choy in our area. Do you think it would work well to use bok choy?

A similar sauce is often served over gai lan, or Chinese broccoli. I think you could use any dark, leafy veg for this dish. The sauce is very versatile :slight_smile:

Diner tonight was shrimp, green beans and orange pepper in a red curry sauce and served over rice.

A simple meal tonight with some of my favorite flavors. A b/s chicken breast was sliced in half lengthwise and then each piece in half. Pan-seared in olive oil and removed to a baking dish.

Chicken stock was added to the pan and reduced, then a combo of maple-mustard, stoneground mustard, maple syrup, s/p, apple cider vinegar, minced garlic, and minced fresh thyme was whisked together, added to the skillet, reduced on medium-high for about 5 minutes. Poured it over the chicken and baked at 350°until done. Since the sauce hadn’t gotten as glazey as I had hoped, i put it in a small pot and simmered on medium-high for another 4-5 minutes. Sprinkled the small piece of chicken with fresh thyme and parsley after plating.

Buttered steamed baby potatoes and steamed green beans with s/p and dried savory.

There was wine.

I had a preemptive 1 hour PT sesh today bc tomorrow (haircut) & Wed (molar extraction :woozy_face:) are out for me. My PT thinks I may need shoulder surgery before my collarbone detaches itself from my scapula entirely — unfortunately it’s not something that strength training alone can fix. Obviously, I’ll try to see an orthopedic doctor for a second opinion, which likely means a new MRI. So glad to continue throwing money at doctors :roll_eyes:!

Dinner was this curious SE recipe for Southern “fried” chicken:

I was intrigued by the buttermilk-pickle brine marinade, although I used peperoncini brine instead. As with most “fool-proof” recipes I’ve tried, it wasn’t. It was also hella more effort than I usually invest in crispy, juicy chicken thighs, and I don’t really need crispy batter as long as the skin gets nice n crispy…. which it didn’t :slightly_frowning_face:

The breading was flavorful enough, but I won’t be making this again. In any event, I mostly made this to put that delish hot sauce on it :grinning_face_with_smiling_eyes:

Side was buttered corn with parsley & smoked hot peppers from a friend, plus a simple salad of romaine, tomatoes, radishes, red peppers, avocado, in a buttermilk ranch dressing.

By the by, have we done a “cooking from SE” thread here? Nothing comes up for me, but I only did a very superficial search.

Fave beef vegetable soup with plenty for the freezer. All the veg were fresh except the peas; the carrots, tomatoes, Limas and corn were all purchased raw locally.

I made a really concentrated beef stock from scratch for this and it was well worth the effort.

Pan-roasted pork tenderloin with a sweet-and-savory peach glaze. Peas with tarragon and butter. Apple slices. Leftover potato-scallion-bacon gratin and roast carrots.

Comfort food. Meatloaf, baked potato with tpstobscgo. Mixed greens salad, red onion, cucumber, tomato, pesto dressing. Meatloaf was beef, pork, Italian sausage, finely minced carrot, celery, onion, garlic, egg, bread crumbs, a splash of milk, s&p, granulated garlic & onion and dried oregano. Served with ketchup. Today was the last day of Negroni week so I had one.

Leftover chicken and veg soup with new crisp tender green cabbage and broccoli. Wanted two eggs but only one and a half made the pan. I crack my eggs on the counter and the second eggshell disintegrated depositing the egg on the tile. Not one to waste food ( as you can probably tell by all the leftovers) I spooned most of the yolk in the pan.

Celebrated our 23rd anniversary 3 days late (we both forgot (!!) and i had dinner plans with friends the night of!) with brunch and dinner. I fetched and the BF shucked oysters, and on my request he made spectacular softly scrambled eggs with butter, creme fraiche, and chives. Divine. Frites were courtesy of Foreign Cinema, right around the corner from us - besides his homemade, these are our favorite fries.

I’d gotten up early this morning and made a short rib and oxtail ragu - browned the meats, leeks, shallots, and garlic, then braised for 6 hours in chicken stock, passata, red wine, with fresh herbs. Added carrots in the last couple hours, then separated the meat from the bones/fat, defatted the stock, and blended the veggies and broth and shredded the meat. So tender!

Simple salad of radicchio, spinach, cherry toms, with the leftover mignonette (just added some good evoo & a little salt - fab!) as a dressing. Also, I made a cauli puree with gorgonzola, milk, and a splash of heavy cream.

I was going to make a Sicilian ricotta cake for the BF, but it was too much, and he has leftover cornbread he made that he’s been nibbling on for days. So a delicious Oregon granache with TJs cocoa truffles (great pairing) served as our dessert.

Oof. All very good but oof!

Spaghetti and meatballs. 50/50 pork/beef, browned in the air fryer, simmered in a light tomato sauce. DeCecco whole wheat spaghetti.

Sausage (I like mine burnt), cauliflower and broccoli with some Caesar dressing and sweet potato, zucchini and feta. We went to a car show down the highway this afternoon, so needed something quick. I wasn’t cooking all afternoon while I was watching the Bears win!
