What's For Dinner #117 - Time to Dig in the Dirt! Edition - April 2025

No damage, thankfully. But it’s so bad around the state it may take 1-2 days :scream:

Had some meatballs and sauce, + extra Mutti tomato basil sauce and some shrimp in the freezer so dinner was linguini something- or- other. Pretty dang tasty if I do say so myself :pinched_fingers: :yum:

I [am reasonably sure that I] have some I can send you a bit of…PM me.

e’ry time!

If you have someone to share it with, go for it! I’d order it immediately as an interesting not-before-know-to-me chile…except that I have a huge collection of exotic and not-so-exotic dried whole chiles and chile flakes I need to use up! That have been hanging around for a while.

thanks for the offer, so generous.

Sooo…today’s craving became sundried tomatoes in oil when I was ruminating this morning on how to make my b/s chickie boobie tonight.

Minced 1 large SDT, crumbled some almost gone feta, minced some fresh parsley and mixed it together and stuffed the chicken. Closed with some toothpicks.

Pan-seared in olive oil, then baked in the toaster oven at 350°. Added some white wine and lemon juice to the rest of the bits in the skillet and reduced for a tiny bit of sauce.

Near East rice pilaf and steamed green beans tossed with a bit of butter, s/p, and marjoram.

Tonight’s dinner was chicken legs in a mushroom sauce, buttered egg noodles and green beans.

This week is incredibly busy. Tonight I fed the kid in between after school activities, and my husband picked up basil chicken and tofu with vegetables and brown rice for us to eat after kid bedtime.

It was fine. My usual complaints – too much sugar, not enough aromatics or flavor.

The Cheese Board Cookbook was one of the first cookbooks I ever owned. I no longer have it, but sometimes regret letting it go. Sourdough pizza crust - the first I ever heard of it!

Like @ernie_in_berkeley, tonight was fish and chips: deep-fried halibut and convection-oven fries. Homemade tarter sauce.

I was short of rice flour, and subbed about 25% corn-starch for the fish batter, and all AP for the dredge. Worked fine. A shout-out to eGullet for the assist (Flour blends for Deep-Frying).

Started the May thread a bit early 'cause I’m tired and going to fall asleep at any moment.

Corn starch works very well in frying. That’s a beautiful crust! My own fried fish isn’t deep fried, just pan-fried in EVOO.

And last night’s fried catfish had a sad ending. I ate half of it and put the rest into a container for the fridge. I wasn’t paying attention, and the container sat on the counter overnight. Oh well.

Long day today, didn’t feel like cooking. It’s Wednesday so it’s $5.00 sushi at Freddy’s. I picked the fake crab and spicy mayo one, added pork bun and spring roll. The sushi was meh, bun and roll were good. I made the sauces, nouc cham and soy, sesame oil, black vinegar.

Small avocados were on sale last week (4 for $1); they did take a little while to ripen up. Sunshine had been carefully watching them until they were soft enough to become California Rolls (sushi). She really enjoys any type of sushi. And yes she finished this entire plate!!

Ugh, those extended power outages upend daily life throughly if you’re the main person who puts meals on the table. I hope that your electricity returns very soon.

Thank you, @tomatotomato!

The power was still out downtown, in our hood & for many of our friends by late afternoon, with promises to be restored at some point later today, so we gathered at the beer garden again — it was a much nicer, sunnier evening than the previous one. The place was absolutely swamped, of course, thanks to the combination of great weather & power outage, and the line at the food truck ridiculous. Once the sun went down it got pretty chilly, but thankfully one of my gal pals works there (it was her day off & she was just there to bid us farewell), and she was able to snag us a fire pit & a couple of blankets for some silly folks who weren’t properly dressed for evening temps :grimacing:, and we were able to hang out and stay warm.

Attempts to order other food for delivery were thwarted by… the power outage everywhere. We snacked on a mediocre “charcuterie plate,” shitty popcorn and potato chips until the food truck line had died down around 8pm. I managed to snag 2 of the last burgers they had left. They were dry and not very good. No pic. A late arrival was nice enough to drive to a pizza place and pick up a couple of pies for our group. Pizza also wasn’t great.

Meanwhile, we got a txt from our buddy who’d had us over for the impromptu salmon pasta the previous night, asking we had power. Theirs had just come on!

We decided not to jinx ourselves and drove home expecting nothing.

The power IS back on. Fridge foods will have to be combed through today, but we’re pretty sure our freezer contents are safe.

We are more fortunate than many others, including our friends and the rest of the state, where it may yet take days. Feeling very grateful.
