What's For Dinner #116 - the Mardi Gras / St. Patrick's Day Edition - March 2025

Sunshine had another “girl’s night” dinner party at a friend’s house, so I didn’t have to cook, tonight. I heated up some canned tomato soup with milk and made a quick cheese quesadilla.

And yes, I know I used a measuring cup as a soup bowl.

A sunny day yesterday with balmier temps & a few trees starting to bud, which gave me hope that spring might be just around the corner :tulip: :tulip: :tulip: :crossed_fingers:t2:

My elderly neighbor surprised me with a pickup request at the hospital in the AM when I was still on my second cuppa — there’d clearly been some miscommunication, so I took care of that & ran a few other errands while I was out. My usual black winter garb def felt out of place in the bright sunshine :grimacing:

My gal pals and I met up for our weekly gathering in the early evening at a brewery with a gorgeous outdoor yard, where we could soak up a few more rays before the sun went down and winter returned swiftly. It was one of the bartender’s birthday, and he’d organized a low-key jam to benefit a local charity for mental health support. When my singer friend and I went over to congratulate him he tried to enlist us, but we were quite happy to be in the audience & donate to the cause in other ways :slight_smile:

One of the more popular food trucks had set up, and I had a smashburger with bacon & sharp cheddar & their crispy battered fries with TPSTOKAM.

Burger was a bit dry, so I dragged the upper bun (brioche, also a little too puffy for a smashburger IYAM :woman_shrugging:t2:) through my ketchup & mayo blobs. Another friend got their carnitas street tacos, which looked quite appealing.

Early night cuz school night, but it was nice to see everyone :blush:

The landscaping company at my workplace was pulling up the “plow stake guides” at the curb edges when I was leaving yesterday. I said “YAY! Winter is over!” and the guy replied “Shhhhh…don’t let them hear you!” :laughing:

Yes it was pretty great! It could have used more lubrication (butter) but the flavor combo was really fun.

Seems like the best answer to me.
Some homemade Broth and Miso and you have a pretty damn good Broth for Ramen.

Cabbage, tomato sauce, TJ’s soy spheres, parm. I could not stop eating this. It was supposed to be two servings. It’s gone now.

i’ve not heard of soy spears, will have to look for them at TJs. what section are they in, please?
