Improvised pasta with smoked salmon, caramelized fennel, preserved lemon and chives in a cream sauce. I didn’t have any heavy cream, but I did have half and half and khoya, aka evaporated milk solids, so I added a bit of that to the half and half to enrich. Made for a delicious, silky texture.
Happy Thanksgiving to those who are celebrating! Tonight’s dinner was turkey (white and dark meat), mashed potatoes, roasted veggies, and stuffing. It paired nicely with a sparkling apple cider.
Arctic char and corn chowder with chipotle and Fresno chiles. We had a cold and rainy day here outside of Boston, so perfect weather for this. Leftovers for lunch tomorrow, too!
Yesterday, I had thought I was going to make a turkey pot pie today, but swiveled when I didn’t feel like it this afternoon.
Went easy with a combination of garganelli pasta, leftover turkey breast, carrots, green beans, red bell peppers, with a garlic-herb cream sauce using Aldi’s garlic-herb cheese, similar to President or Alouette.
