Tacos with scarlet runner beans, smoked mozzarella, and roasted butternut squash. We had some purchased tomato habanero salsa with this. Sometimes you just need a big cheese bomb for dinner! I highly recommend the combination of Rancho Gordo’s scarlet runner beans and roasted butternut squash, btw! Perfect!

Korean Bibambap, with prime ribeye and garden asparagus. I like this Bon Appetit version, but added a little boiled apple cider to the marinade tonight (ala bulgogi).

Variation on Dak Naengchae (Korean chicken salad with pine nuts dressing) - diced poached chicken breast, shredded red cabbage, green beans, cherry tomatoes, cucumber, scallions in a dressing made in the blender with pine nuts, yellow mustard, gochuhang, lemon juice and some water.

Another submarine sandwich with roast beef, Genoa salami, hard salami, provolone cheese, sliced tomatoes, Grillo’s pickle chips, horseradish sauce and instead of avocado in the last sandwich, I used hummus.

I was going to eat something lighter, but gave myself the OK to eat this because I added up the distances of my walks this month. I walked 29 of 30 days for a total of 264km/164mi. I really didn’t expect that I’d walked that much, but I’m happy that I did. I’m going to put on new shoes tomorrow and get a haircut as well. I haven’t had a haircut in the US since 2009 and am a bit scared because I’ve never had a bad one in Japan…but have had a good number of them in the US.

Shiitakes and yu choy with oyster sauce, which did not cook down as much as I thought it would.

Long-cooked squid with red wine and tomatoes, which cooked down way more than I thought it would.

A night full of surprises.

Dinner last night was a delicious late HO lunch at a Central Asian restaurant ((yup, there’s a pattern here with HO outings serving as both meals of the day, lol).

I couldn’t eat the Samsa so I brought it home and ate it in the evening. It was spectacular!

My other favorites of the meal were the dry-fried noodles and the black fungus salad, but there wasn’t a dud on the table, which is unusual for any large meal.

Ah yes, seems the translation is a bit faulty. The kotikokki potatosalad recipe is:

9 big potatoes (firm)
2 apples
2 pickled cucumbers
1/2 red onion (used a bit more)
150g mayo (used a bit less tbh :wink: )
2 dl kermaviili (this is some Finnish stuff or more like a naming convention, it’s basically the same as a light version of creme fraiche/sour cream. Kermaviili is usually about 6-12 ÷)
1 dl creme fraiche
2 tbs sweet mustard
1/4 tsp white pepper
1/2tso black pepper
1/4 tl salt and sugar

We made this one for Vappu, added some chives on top. I really like the potato salad quite a bit, did you like it?

I keep a light sour cream on hand now that I’ve got to watch my fat intake more, which is 4% milk fat.

I don’t have a sweet mustard on hand so I used a little French mustard from Burgundy. I’ll keep my eyes open for a Scandinavian sweet mustard next time I’m shopping.
