Uninspired & unmotivated today… Freezer dive produced a 2-1/2 lb boneless pork butt roast. Went to my favorite Instant Pot website, Amy & Jacky, found their recipe for IP Roast Pork Butt… Very simple & turned out yummy! Roasted veggies on the side.
I saw tons of cranberries today Malwart, Costco and my local grocery store, all were ‘sale priced’.
Quick dinner, sometimes called Reispfanne in Germany - pretty much putting together what is in the fridge in a pan (Pfanne) and serve it over rice (Reis). Today it was ground pork, red and green peppers, tomatoes, bok choy, ginger, onion, garlic and some vegetable broth. Served with some sour cream (as every Reispfanne should be)
Not just for pimping up one’s Reispfanne – sour cream makes many things better

I recently started making frico. It’s fantastic. The recipe I followed said to use a non-stick pan. After the onions are cooked, the potatoes are mashed in, the cheese melted, I raise the heat and cook it for another couple of minutes, flip it, and cook for another couple of minutes. It browns nicelyl
The classic meatball entrée at Meatballs For The People, Stockholm. Of the several meat choices (including moose, reindeer and bear) available, I chose veal, which is served with mashed potatoes veal gravy, cranberries and pickled cucumbers. Washed it down with a very refreshing Lingonberry drink. The staff did a couple of small gestures that enhanced my meal; First they honored my request to add their spicy tomato sauce to the meal and two, since I was eating pretty late, they asked if I wanted to try a glass of their spiced mulled wine (not pictured) on the house, which I did.
Breakfast for dinner tonight, 3 of us-scrambled eggs 3 ways! Soft for me, with cheese for DH and dry for second son. A little ham and green salad. Hit the spot, no turkey involved. Although red wine goes better with eggs than I expected.

The last of the bird. Turkey soup in homemade stock with veggies. Freshly baked biscuits with butter and a choice of peach or pumpkin jam.
I made Rancho Gordo Santanero Nero Delgado beans, with dried ancho and guajillo peppers in the cooking water, as well as onion, garlic, bay leaves, a bit of cumin, oregano, and s&p. It ended up soupier than i wanted, so I blended it and added potatoes and carrots, plus a ton of cilantro. Shtoup! More cilantro for garnish, and the BF made guac for us to top, along with a squeeze of lime. The broth went into the rice too, which I almost burned, but just managed to save most of. Phew Dollops of El Yucateco habanero sauce after the pic was taken. Very tasty and warming meal on a chilly night.

Sloppy Joe from the freezer, (leftover from when family was visiting) on a toasted French sandwich roll, Tillamok sharp cheddar and chopped onions. McCain’s onion rings again. This time fried and salted, much better, made even more so dipped in Maya Kaimal spicy ketchup.
Manhattan and wine.
I bought a new marble mortar with a wood pestle and christened it by making some pesto, which sauced some spaghetti, green beans, and potatoes.
And wine.
Last night: spicy curry chicken with Maya Kaimal simmer sauce. String beans added as an extra veg. Basmati rice. Garlic naan not pictured.
Tonight: ended up ordering Chinese. But before that we both had the oddest craving for Texas Roadhouse rolls (which are like the best thing ever). So we stopped there for a basket, and a drink, of course. Booze and bread…its all I need! Didn’t think they’d make a decent martini (Bombay Sapphire) but I was wrong. Excellent. BF had beer (Shiner Bock).
