I made chicken enchilada casserole with those corn-flour blend tortillas from TJ’s. Homemade sauce. Tex-Mex bagged slaw on the side. Hit the spot and was followed by a sliver of pumpkin pie.

Last night was breakfast for dinner. Ham/cheese/tomato and fried potato omelet with a toasted . everything bagel on the side.

Tonight it was a pan seared pork chop w/ sauteed broccoli/romaine/cherry tomatoes and red onions.

Oxtail ragu (freezer find that was stashed away apparently in Oct. 2020) with peas and orecchiette, garnished with pecorino and parsley.

Steak and ale pie made by the extremely talented woman who is wrapping up her internship at the nearby butcher/farm market and off to other adventures. What @Harters would call a proper pie - top, sides and bottom crust of handmade puff pastry, delicious filling with local beef and veg. I only managed a third of it, hope the rest is as good reheated.

I’ve been feeling a little fluffier than I did when we returned from the island – perhaps no surprise given the last days’ indulgences, so tonight casa lingua took a lighter approach to dinner: soup n salad.*

Soup was TJ’s creamy tomato soup doctored up with Aldi’s habanero paste, frozen basil & fresh parsley, salad was Aldi’s gem mix with English cuke, radish, flavor bomb materz, avo in a sour cream dressing with fresh dill & parsley – both of which I have in abundance for some reason & that stuff goes bad so fast! I also wish I’d picked up some pumpkin seeds because I was just recently reminded of what a nice, nutty addition they are to fall salads. Next time.



*OK, fine. There were also two slices of leftover pizza we shared :upside_down_face:

Tortellini soup, with homemade chicken stock (from our Thanksgiving meal) and heavy on the vegetables. Rana brand cheese tortellini from the grocery store refrigerated section worked surprisingly well here—first time trying that pasta.

Doctored it with a little wine and a can of petite diced tomatoes and it came back to life admirably!

Happy belated Thxgiving! Ours was not an unmitigated success. I made a slightly larger, spatchcocked bird last year that turned out perfectly. This year’s (a 7.6 lb-er), not so much. The thermapens kept saying it was ready when it wasn’t, so we had to put the dark meat back in and ate some of the white meat the night of. White meat was pretty great, though, very juicy, plus our gravy (made with stock from the back, neck, etc., the day before) turned out fab. I also made an Italian dish - Frico Friulano - a cheesy disk that was supposed to crisp up but never did. Still, it was tasty - onion/cheese/taters - you can’t go too wrong. And a giant salad of endive, little gems, radicchio, frisee, toasted walnuts, and shallots in a sherry vinaigrette. Earlier in the day we snacked on smoked salmon (unfortunately, pretty flavorless!) over mascarpone with balsamic glaze, Hawaiian honey, and a little fennel pollen, on rosemary crackers. meh! Picholine olives warmed in evoo, with a clove of garlic, mandarin peel, and thyme, however, were fantastic. Also, camembert di bufala, boquerones, and bbq cheeps, with French pink bubbles to wash it all down.

The next night, my sister and I split a rib-eye over another big salad. The steak could have been pulled a couple minutes sooner but had great flavor, finished with Fatted Calf truffle butter.

Sat. night i went to a cheffy friend’s Indonesian dinner party and gorged on chicken and beef satay, rendang, quail, a lamb dish, fruit salad (rujak), long beans in a coconut cream sauce that was to die for, coconut rice, and a berry galette with homemade pear ice cream. Friend made his own sambal oelek, kecap manis, and a fiery habanero mango salsa to go with everything. Fantastic meal.

Last night the BF made turkey pot pie from the leftovers of the bird. Quite nice.
And tonight, i asked him to use some of the mascarpone in a sauce for some sweet potato gnocchi i picked up. Unfortunately, they turned out a bit too salty as he used more butter than mascarpone. Wilted spinach salad to go with.

All in all, a LOT of indulging over the past 5 days, some good, some just ok. Mostly back to the low-cholesterol grind, as my numbers are down but still on the high side. At least I’m happy with the scale these days.

I found a can of nacho cheese sauce in the back of the pantry and used it to make a Sliced Potato, Onion and Nacho Cheese dish. I opened a can of green beans as our vegetable.
