One of my guys’ favorite meals…Roasted salmon with soy-honey-rice vinegar glaze. Salmon rice bowl with pickled red onions, cukes, cabbage, and carrot; and avocado for B. DIY salmon gimbap for Spring Onion with pickled cukes. Grain mix of farro, Himalayan red rice, forbidden rice, and a smidge of sushi rice for all of us. I picked at dinner with some gim wrapped around rice because I had to run out to a talk at 7 pm.
Pan-roasted pork chops marinated in a traditional souvlaki dressing. Lemony Greek potatoes. Chopped salad in vinaigrette.
20 minute duck breast with pan sauce, potato pave, asparagus with hollandaise, pea shoot salad with honey mustard dressing. A weekend conversation about potato pave ended up pulling a whole dinner together. It was very good.
I made tofu makhani (but swapping out the paneer and cooking stovetop) and Melissa Clark’s coconut curry chickpeas with pumpkin and lime (gift link). To the chickpeas I increased the spices and aromatics and added BTB and a splash of soy sauce for more umami.
Served over brown rice with green peas.
DH is at a conference today and tomorrow, at a large luxurious casino. So SS (second son) and I went a few towns over for dumplings. Such a hardship… !

Incessant rain has me craving soup. So potato soup it is. Sauteed ham, onions, garlic, added diced Yukons and chicken broth, simmered until potatoes were done, mashed a few to thicken and then added heavy cream. Served with a big glob of butter, smoked paprika, parsley and a Gruyère and sharp cheddar on French bread grilled cheese sandwich. Beefeater rocks and wine.
Highly recommend. So simple, so good.
I resisted the urge to put anything other than S&P on the salmon, and the simple dressing was plenty — microplaned ginger, honey, soy sauce, sesame oil.
I sprinkled sesame seeds over everything after the pic.

Lions head meatballs tonight, which have been on my wish list for ages, but I was finally encouraged by @MunchkinRedux making them! (Recipe adapted from COTM Woks of Life.)
Baby bok choy and rice rounded out the meal.
