I recently picked up a heavy metal rolling pin (Goodwill). It helps in making the dough thin, but not nearly as thin as hers. Forgot to mention, I also add a little cheese to my lentils and veggies (filling)… not much, though.
50 grams lard (I used butter this time though and it’s delicious)
5 g salt
100 g starter (100% hydration)
100 g kefir/buttermilk (can use warm water, but I had some kefir that I wanted to use)
Mix melted lard or butter with salt, starter, and water, and add to flour.
Knead until smooth and supple, around 5 minutes.
Rest for 20-30 minutes.
Divide according to size you prefer. For 10-12 inch tortillas I used 73-75 grams of dough, which gives me 7 tortillas.
Roll out on a floured surface to desired diameter and thinness.
Heat a skillet or griddle over medium high heat (I like cast iron but had the nonstick handy and used that) and cook a tortilla for maybe 20 seconds, flip, cook another 20 seconds, then flip again and cook until light spots appear, then flip once more. This is just to keep the tortilla from cooking too hard since I make them to store and warm up later. If you prefer you can cook them so they’re toastier.

Thai takeout from a food truck market down the road from our resort. We had hoped to find the huli huli chicken truck to still be open, but it and most others were closed by the time we got here – just after 7pm. People sure eat on the earlier side on the island
We grabbed an order of som tam and pork laab to go, as it was clear the lady was ready to close up shop, too. When asked about our preferred heat level, I chose ‘spicy’ over ‘medium spicy.’ Bad move
Thank goodness for the generous amount of rice and cabbage (Thailand’s equivalent of raita, I suppose, in lieu of any cooling dairy condiments) that came with close to a pound of scrumptious, lardy laab, and an equally fiery papaya salad. I ate more rice than I usually do and was pounding the Sapporo. Hope it won’t burn us a new one as we have plans to hit the beach early tomorrow morning.
I also visited the New Eastern Farmers Market in York on Friday on my way up. Thank you for the recommendation - I got a mini apple crumb pie, some “yellow” sweet potatoes, and scrapple for spouse who loves the stuff. Great place.
Based on this, but without the onions, peas , olives and peppers, because I have to go shopping. My produce on hand is down to celery, 1 parsnip and 6 mushrooms.
