Waffles from Breakfast with Beatrice (Beatrice Ojakangas), featuring whole wheat flour, oatmeal and chopped walnuts. I was happily surprised that as each cooked all ingredients melted together to give a stays-crispy sturdy waffle. No chewy-bits of oatmeal or the nuts, just flavor. Great with maple syrup and fresh strawberries.

The book has 18 different waffle recipes , and I’m planning to have fun trying them all this year.

A few words, please, about the (onion strings?) at the top and the (pickled red cabbage and microgreens?) salad in the center… Did you cook this at home?
