Buttered matzo is delish. I sprinkle everything bagel seasoning on it.
Speaking of which: this morning I made Matzo Brei with said sprinkling. Easy, fluffy, delicious.

Mango sticky rice. A pleasant departure from the typical weekend pancake or waffle breakfast. Only trouble is that I know when I buy mangos I will be prepping them too. No one in the house will do that labor… Pardon the child’s Ikea plates that we’ve owned for 20 yrs. They keep coming in handy…
I’ve been putting pickled red onions on everything. Love the color too! Multi grain toast with avocado, cherry tomatoes and quick red onion pickles. Yummmm
more of the TJ’s baby cauli, with sauteed arugula, a little bacon and 2 eggs. oh and a random purple baby carrot. EBTB, too.
yum.
i love making avo toast with thinly sliced radishes quick-pickled in ume plum vinegar…
I know, right?
I’m always telling them about The Little Red Hen
Breakfast at a Diner, loved it because I didn’t have to cook or do the cleanup.
Was nicely pampered by the staff and had some me time.
A favorite!!!
It would be wonderful if you would caption your excellent photos so we can know what we’re looking at without having to ask. Thanks.
Oops sorry.
That was my poor attempt at an open face sandwich.
Thomas English Muffin, two fried eggs, capped with two halves of avocado.
Notice how the avocados follow you around the room?
That’s either a giant fork or a very small avocado.
I’m running way behind on posting but here’s a few:
2 eggs in a bowl (butter spray). I was tired of fried eggs and turned to microwave poaching for a few days. The yolks were not completely hard; almost too dry but good.
Hash browns in a very hot cast iron Dutch Oven in corn oil, finished with butter. First time I’ve bought corn oil in ages but haven’t been able to find peanut oil in anything but too large jugs. Hash browns have to taste of butter to taste right to me.
Eggs poached in a Nordic Ware microwave poacher. A little less done that the previous. Its very hard to poach eggs in the microwave and get the whites done without over cooking the yolks. Also some sucuk; a very good sausage for breakfast as far as I’m concerned. You can see from how evenly I cut and butterflied the link just what kind of skill I have in the kitchen in the morning
I had an oatmeal raisin cookie, too, from a bakery. I’ve been very addicted to oatmeal raisin cookies lately.
Tomato/basil wrap, fried egg w/some smashed garlic pieces on a small bed of hash browns; gochujang. Dang, that was a good breakfast wrap.
Some more hash browns with slivered green onions in a wrap. The wraps were griddled in hot oil, briefly.
Summers-a-comin - we’re being warned daytime highs will hit the mid-90s and maybe the upper-90s by the end of next week. This is just not right — but it happens sometimes. It’s at least a month too early.
So I’m trying cold or chilled soups. Soups are good for hydrating in the morning, so I’ve realized.
Put this one together the night before and stored in the fridge - tamarind soup base, Halo organic ramen noodles, shrimp, stir-fry veg mix, white pepper. No heat applied at all, some ingredients right out of the freezer. Not bad. I will be exploring chilled soups for a while.
My sister gifted me a jar of brined summer truffles in oil from Costco. you can taste the brine a bit on their own, but in this they were just buttery deliciousness. I wanted the eggs a little creamier but oh well, still really good.
on the last of my toasted Zingerman’s onion rye.
Gorgonzola on toasted sesame sourdough followed by a cinnamon sugar mochi donut for breakfast. Iced coffee.
Egg (fried) on egg (scrambled) love, all draped over two halved avocados and garnished generously with furikake.
Dunno if anything can surpass the excitement of indulging in one of my favorite culinary pleasures for breakfast: trout roe on toast.
Makes me want to go pickle some onions!
