Made a quick very mayonnaisey egg salad ate with leftover pickled salad from dinner carrot, cuke, red onion, dill / French ham / whole grain toast soldiers
Leftovers bowl - quinoa, black beans, last boiled egg languishing in the fridge.

Ate them by the kitchen sink before my coffee so it was practically brekkie. Found 2 “pearls” in 2 different oysters.
Boiled up some Lengua (Beef Tongue) a couple nights ago. Tasted so good, had it for breakfast the next morning also. I need to make some Menudo next.
Cut a slab of French feta into cubes. Slice kalamata olives and topped with a chiffonade of basil and a drizzle of fruity olive oil
I went for cheese as well this morning , but my cheese came from a can and it was surprisingly insanely good. Definitely more of a brunch type meal. I highly recommend you try this cheese if you can find it. Sorry not the prettiest of pictures.

How did I not know about this? Last night I typed and then deleted before posting, that it knocked the French feta I had been buying fresh to the #2 spot, wow! There is a small private chain of markets here that sells it. When I was on the check out line I asked the owner if he was familiar with it, he said it was a great brand and that I would be very happy … he was correct, bonus points for its very affordable price. I still can’t believe something this good comes out of a can
This morning toasted some corn tortillas on the comal, then filled with queso blanco, chopped cilantro and continued to cook. Green salsa to finish

Made a few quick shortcakes. Topped half with white peach and the other with some homemade strawberry blueberry jam. And dollops of vanilla whipped cream.

Country breakfast of hash browns, runny fried eggs and SPAM! Hey, I forgot to bring bacon and spam really isn’t that bad, especially the LITE and low salt versions,
Followed by warm rhubarb pie.

Crumpet with potted shrimp & Siracha
I used to be very anti savoury toppings on crumpets. However a restaurant in London started doing crumpets with potted shrimps. I was intrigued and I reasoned that crumpets are really only a delivery mechanism for butter so it should work and it did.
Kaya toast with poached eggs & soy sauce.
Kaya toast (white toast with butter & kaya, which is a coconut jam) is very popular for breakfast in Singapore & Malaysia. Usually served with boiled eggs which are usually very underdone to the point of both white & yolk being runny. Decided on poached, when in Rome and all that but the poached eggs worked well.
Bagel lox and cream cheese. For added flavor and color thin sliced mini red pepper, lemon zest and capers
