We can find Red Fox Leicester up here in Canada. Unfortunately, we don’t have TJ’s. I haven’t been to a TJ’s since my last visit to Boston in 2018!

this morning we did our home-spun Egg McMuffin with Sausage.
it’s really easy - but the sausage thing has to be done in advance and an egg ring is needed.

nuke the frozen sausage patty - 3 mins at 2 + 30 secs at 3 just before use
((((( your microwave may differ!!! )))))

toast the English muffin, fry the egg in the ring, bust the yoke, flip to finish
as the fry starts, toast the English muffin

sausage on bottom muffin,
then egg,
then cheese,
then 15 secs at microwave “HIGH” to melt cheese

The last baked-ahead oatmeal with blueberries cup from the freezer, made in August as individual serving size by baking in silicon muffin pans. I was not a fan of these hot from the oven - just a slow bowl of oatmeal. But loved them after freezing / reheating a minute in the microwave. Best topped with a generous helping of whipped cream / Redi-Whip (not drowned in milk). Another batch will get made this weekend.
