Up early to make egg bake for my Valentine. This one layered ham, diced potatoes, pepper/onion mix, spinach, with egg mixture poured over, topped with cheddar. A second 8x8 pan had cubed bread instead of potato. Almond croissants baked earlier this week will be a sweet treat for mid-morning coffee.

I had breakfast today for the first time in… I dunno how long. Couple of years, maybe.

I wanted to finish the last of the wheat I’d milled yesterday so I made my wife whole wheat & chia seed pancakes. Her nearly always breakfast is yog with chia seeds.

They tasted good but didn’t get as much lift as I wanted, because I used half baking powder and half soda, then absent mindedly decided to acidify the milk-cream mixture so I lost a lot of leavening power as soon as I stirred it together.

Still, they were good and the chia seeds provided a nice bit of crispiness in each bite.



I really need to get a new griddle; CI preferably. These were cooked on a no-longer-nonstick Calphalon underweight aluminum griddle.

If I hadn’t slept late and wasn’t going out for lunch, this would be my breakfast choice today!

If ever you want to save some money, you can do these at home for cheaper. There is a time when I had a child he used to like them for breakfast so I would buy the Pillsberry grands biscuits as well as Jimmy Dean bulk pork sausage by the pound. I would hand shape 8 patties and fry them and bake the biscuits and split them then I’d assemble and freeze and have a freezer bag always where the kid could just pull one out and microwave it in a damp paper towel. the 1 pound of meat and a can of biscuits would make eight not too big sandwiches that were perfect for his breakfast.

Crepe trifecta …raspberry, peach, plum jam; a slick of homemade ricotta on each crepe prior to the jam. Raspberries and Greek yogurt for some extra goodness.

the only thing i get at micky d’s is their sausage biscuit with egg, but almost never get there in time. your post gave me an idea for a hack. thanks!

market basket didn’t stock the jimmy dean biscuit with sausage, but had swaggerty’s. heated them and scrambled a single egg and split it between the two biscuits.
