Bodega-style breakfast sandwich: potato bun, scrambled egg with scallion and zucchini, American cheese, Uli’s breakfast sausage.
I tried something new this morning that I thought went pretty well. Instead of peanut butter and banana. I did my oatmeal with a little bit of maple syrup and a big scoop of roasted orange squash. Tasty and very fall appropriate.
That sounds delicious! And I happen to have maple syrup and an acorn squash in the fridge
When you used squash, did you cube the squash before baking it or did you purée it? I can now cut up butternut squash without cutting off any fingers
however I am not so brave with acorn squash. I may cook it then purée it then add a blob of squash to the oatmeal.
A sooper-dooper healthy virtuous late brekkie of Fage with about half a cup of smashed up poms & another half cup added as is, the few blackberries that hadn’t gone to shit yet, and a few booberries.
It was a delicata that I roasted whole to use in something else as a pasta sub and then didn’t. I peeled it and de seeded it after and then just had lovely soft flesh that was very stirrable into the hot oats.
Wanted to share with you as a fellow oatmeal eater who is maybe looking for ways to keep it interesting.

This morning’s breakfast was another one of my treats from yesterday’s trip to Chinatown - a red bean bun.

I was inspired by the squash and oatmeal combo. Today’s breakfast was toasted oatmeal and apple muffins, Illinois squash puree, and some Asian pears. Fall nibbles which all went well together.
