Y’all have gotten me hooked on that red chimichurri, too! I made it with this mayo/chimichurri marinated chicken and everyone loved it! Lots of good applications for it - including just swiping on bread!
@MunchkinRedux Do you use the amount of olive oil listed - 1/2 C for 2 pounds tomatoes and 1 cucumber?
Thanks @mts for asking about this. I’d mistakenly assumed gazpacho recipes were all similar, and knew I didn’t care for the versions I’d sampled. This one looks nicely different.
I typically use about 2 lbs of meaty (ie. not overly juicy) tomatoes. To this I will add a whole cuke (I know some prefer less), sub 4 t. homemade hot pepper sauce for the peppers, and use 1/4 c. olive oil.
Mine comes out fairly thick, but I’m good with it.
Bacon and egg fried rice with zucchini and scallion. Sriracha for heat.

Inspired by [this Facebook reel](https://www.facebook.com/reel/1553081252314220) bacon egg and cheese croissant roll ups. I liked the technique of rolling up one half, stacking that on the 2nd half and rolling that around the first. The video doesn't include a recipe with measures or baking temp/time. I used 5 large Costco croissants, for an 8x8 pan with and extra half rollup baked in a well greased custard cup. I varied cheeses - sliced American,Tblspoon finely shredded cheddar, Tblspoon large shred cheddar - and preferred the finely shredded cheddar. It took 10 slices of cooked bacon and 6 eggs beaten with 6 T milk to have enough for the pan and cup. My panful baked 30 minutes at 350 degrees. Another time, I'll try baking these in a silicon muffin pan for neatly freezable portions. And I may try a similar technique with sliced bread, which is always on hand so no extra Costco run required.Creative!

Thank you! I try to show some restraint when it comes to butter, but eggs-fried-in-butter are a must.
