A folded egg sandwich on a bulky roll. Inside the egg hide Jarlsberg and sautéed mushrooms. The sandwich is topped with bacon, more cheese, and hot sauce.

Thank you! BF needs to do work for his job today, so I wanted to put something together that would hold us both until we could do a late lunch/early dinner at our favorite local sushi place. I think I am going to try to take a walk to hold off a nap from it :laughing:

Long awaited, totes worth it: a decadent BLAST with heirloom mater, FOUR slices of bacon (hey — we ‘had to’ finish the package :upside_down_face:), smashed avo, scallions, iceberg, Duke’s on shokupan.

TBH I could eat another one right now :smile:

Semi spur of the moment, early morning drive out to Cobourg Ont , about an hours drive from the city. Cute town, been a couple of times before but never driven “the Beast” out there.
Had to stop in at a local cafe/catering co for a couple of fresh pastries(only ate the almond croissant, saving the chocolate one for later) and a really good latte. I should be doing this more often, good for the car and good for their local economy.

Yes, Cobourg is a nice little town; nice marina too. I have a couple of friends living there; 3.5 hours away, so I don’t visit too often.

The traffic was so nice at 7:30 am, smooth sailing the whole way, the way back was a bit more congested but still very manageable.

I couldn’t resist making a version of @Desert-Dan’s bangers-and-mash pie.

I had everything on hand to make it, including a couple of English style bangers and a freshly made batch of caramelized onions for the gravy. In lieu of tomato in the gravy, I used cider vinegar and a splash of cognac. I added frozen baby peas as the veg, used leftover Irish champ for the mashed potatoes (with added egg yolk), and omitted the cheese. The gravy and sausages were prepped the night before. In the morning all I had to do was assemble the pie and bake.

This was good! DH enjoyed his with a side of Heinz beans, while I preferred mine bean-less. There was gazpacho, and half a pie leftover for tomorrow’s brekkie.

I learned something. The spuds need to have a light and fluffy texture to get a good seal on the pie. Mine were kind of chunky, even after mashing in egg and a little chicken stock. I’ll keep that in mind for next time. It any case, it was a hit! :grin:

I was in the mood for a BLT, but had two small containers of different salad leftovers, so…. I TOFTT by frying up a lil bacon and putting it on top of the mixed salad, adding fresh heirloom maters & lots of fresh ground black pepper :yum:

Super-bummed I had to toss the scrumptious shrimp curry leftovers, as they were now a week old. I need to learn to make smaller amounts of food for us. Hate hate HATE throwing out food, especially when it’s this delicious :roll_eyes:
