Knorr Hollandaise works in a shot. I think I use the whole amount of butter, and always add a generous amount of lemon juice.
Monday brunch was waffles made of Snoqualmie Falls waffle mix and purchased eggnog that needed to be used up. Jimmy Dean sage sausage patties cooked up with extra sage. ‘Poppies’ mandarins on the side. Quite filling!

Wednesday’s roast chicken became Friday’s Coronation chicken sandwich, with chicken, curry, mango chutney, mayo, green onion, dried apricots and cilantro on toasted sourdough.

The deal is, I’d just bought a silicone egg ring with the dream of making my own Egg McMuffins.
But baby steps! This was just the egg and the muffin. I toasted the muffin in my tiny air fryer. And I will admit to having bought a muffin splitter a while back, which I use. Happily. Meanwhile, I had no idea how long the constrained egg would take to cook. No prob as long as the white was thoroughly cooked; I like runny yolk fried eggs.
There was a lot of butter in the pan. How to evenly butter those toasted muffin halves? Well, I lifted the egg out with a spatula and mashed the two muffin halves into the frying pan’s butter spa and whirled them around. Assembled. Ate. Next time I’ll do the whole Egg McMuffin. I promise.

I have one of those muffin forks too but mine is a basic model
I went to a dessert tasting, a near sweep of the Sweet Rehab menu. Not the most nutritious breakfast, and I’ve reached my sugar quotient for the decade. It was good, though!
