Holy pepper Batman!
Last nights squashy mashed potatoes (scallions, onions) refried on the stovetop. Fried eggs. Leftover roasted carrots.
I feel like carrots are an underused and underappreciated comestible for breakfast.

I had a couple of slices of ham left in the fridge so I had them for breakfast with a corn tomato salad.
I poached the egg and added shiitake mushrooms to the simmering broth, along with some baby bok choy that needed to be used up. Very enjoyable breakfast!
Yesterday’s breakfast was l.o. schnitzel and nunus from the other night. I added a bit more lemon to brighten the morning and had half a Bartlett pear that was over ripening. The flying squirrel got the core, it loves pears.
Wow! Now that’s a breakfast. I don’t think I’d need another bite until dinner
We’re hoping it keeps us going for a while (I’m anticipating an early dinner of crab dip, beverages, and bread around 4-5pm). I thought of you while I was poaching the eggs, actually

On Sunday mornings I’m usually lazy and I make scrambled eggs for breakfast. Every. Single. Sunday. So today I decided to live dangerously and I made fried eggs and peameal bacon. I didn’t break the eggs! And I didn’t overcook them! (Eggs are one of the hardest things to cook IMHO.)
Ham, egg, and smoked cheddar on the last English muffin. BF got his on sourdough. Tater tots. Ketchup laced with El Yucateco hot sauce for dipping.
