My mom always fried the leftover egg wash, without the breadcrumbs, when she made fried eggplant or schnitzel.
To your stomach, all potatoes are mashed.

A veddy, veddy, veddy late breakfast due to an unplanned party night that took me straight back to the 80s
I’m too old for this ish. Slept till after 1pm. A solid breakfast plate was needed: SBE, sourdough with fennel salami, assorted smoked fish & horseradish, grilled & marinated eggplant.
Time for a nap now
Savory French toast with minced scallions, served with apple jelly (a delicious combination of savory and sweet). Egg on a roasted asparagus raft with hollandaise. Strawberries.
Chicken and potato tacos with the usual suspects.

Potato always sounds good to me as a taco ingredient, but after multiple tries I’ve decided it’s just not “right” in mine.
If I have leftover cooked potato chunks, I like them in an old-school hard-shell taco. If I have leftover mashed potatoes, I like them fried, like this:

I also find sweet potatoes are just as good as traditional.
I think Patatas Bravas in a taco could be a good hybrid breakfast. Or Patatas Bravas wrapped in a laffa.
I’ve been know to turn leftover boiled potatoes into home-fries the next day, or dice & make a hash with bacon & onion. Fab with a fried egg or two on the side.

This morning’s breakfast was a kohlrabi greens frittatta. I used a bigger pan today so the circumference of the frittatta
was a little bigger than I would have liked. I had to fold it in half to get it to fit on the plate. Served with maple infused bacon on the side.
Omelette du jour stuffed with bacon, mushrooms, leftover sausage and cheese.

Tex Mex “fried rice” with red rice, Spanish chorizo, eggs, and scallions. Leftover chili wings crisped up in the convection oven. Avo.
Wow! Now that’s a hearty meal to start the day
Lol. We walk in the state park every morning before breakfast. About 5 miles; lots of hills. We’re pretty hungry hikers by the time we get home, and fortunately today had lots of leftovers to work with!
