Brioche French toast, served with wild blackberry jam and Vermont maple syrup.
Sautéed a few diced baby bellas in butter & added 2 lovely, local eggs scrambled with fresh parsley.

Green eggs and ham (and half a diced zuke that needed used) with a side of vulva-shaped bacon. Cleaning out the fridge time, and a good use of leftovers
Icelandic fish cakes with salmon, spuds, shallots, and scallions. A few spoonfuls of egg-and-flour batter to bind it all together.
Asparagus hash with bacon, shallots, and potato (similar recipe here). Eggs fried to order.
Mashed potato pancakes made with Easter’s mashed potatoes with an addition of chopped green onion, an egg, some flour, s&p and gently fried in butter. Served with a bacon and cheddar omelet. Peach nectar and hot English Breakfast tea to wash it down.
