What’s for Dinner #56: The No Place Like Home Edition - April 2020

Saregama inspired me to try what I was afraid would be beyond my abilities, and I’m pleased to say, it was pretty damn good! Dim sum night. We have shrimp rice noodles, chinese broccoli, red bean buns, and some empty rice noodles, once we ran out of shrimp. These are much prettier as rolling took a little to get the hang of it.

Oooh yum! Glad it worked!

I realized yesterday that because some of my current household are gluten free, there is already tapioca starch here… I think I just need superfine rice flour now (because regular rice flour is apparently too grainy for cheung fun).

It worked pretty well, and it gives me the confidence to try again. I ended up putting a little rack in my biggest round pot with a lid, and using a square porcelain plate with a rim. The first one stuck a bit, the rest came off nicely. I don’t see myself doing the sheet or towel method (too messy) even though I’m sure the noodles would be thinner. Interesting that the recipe I found (and made my shop list with) included rice flour, and tapioca and wheat starch. But when I came back and looked up recipes, I couldn’t find that one, and ended up using the rice and wheat, but with cornstarch. Gotta say though, I’m a little proud of me :slight_smile: Wins in the kitchen are good fun.

I had a very “off food” day. Didn’t feel like eating at either breakfast or lunch.

Zoom cocktail hour with college roommates.

Then I got hungry, so I made an asian-ish chicken salad using some of the leftover roast chicken, fennel, the last of a bag of cabbage slaw, scallions, and cilantro. Dressed with homemade alioli and sriracha.

Somewhere in the middle of this leftover smoked pork rib chop up . There is a gooey egg on a tostada shell . Cheers.

Looks great! The buns especially! How did you make the rice noodles?

This was from Friday. Rice cooker polenta (should have used the porridge setting), a breakfast sausage patty from the freezer, broccolini, fried mushrooms, and a fried egg.

Strip steak with Yukon Gold potatoes.

Might be the toughest steak I’ve ever eaten. Like sawing through a 2 X 6. As I was eating the steak, I had visions of this poor creature walking its ass off along the Chisholm Trail.

Cooking cooking cooking. Ribs the other night. Good not great. Apparently I should have bought baby back but didn’t see them at the store.

Last night, marinated chicken in herbs, mustards and such. Lots of veggie sides. Little potatoes, asparagus, green salad.

Tonight something with shrimp and green beans. Maybe some sort of stirfry?

Cooked last night for me and sister. Shrimp and grits with leftover Cochon Butcher duck pastrami and andouille sausage (supposed to be Tasso ham but that’s what I had) cream. Kentucky Weisenberger yellow grits - so rich and creamy.

The Bf made no-knead bread - not sourdough. Turned out great!

I consulted a number of recipes and videos, but in a nutshell, you make a batter, which is rice flour augmented with cornstarch, wheat starch, some oil, and a lot of water, and then pour a bit of it onto something flat - I used a plate - that is well oiled and steam it. If you don’t have a legit steamer, you can McGyver something, as long as the ultimate result will steam. Then you take the rice square or circle or whatever, fill it, and roll it. How well you oiled your surface and how thin/thick you poured your batter will determine how easy it is to remove. There is another technique where you pour the batter onto a wet cloth on a container, which apparently allows thinner noodles, but that was seminar level for me, so I passed.

Masks, gloves and either sun glasses or glasses or gargles to protect eyes …

It is a true necessity.

I am surprised the children have caught it however, depending on ages and “immune” …

This is very interesting … As Covid 19 attacks the respiratory … and the article states nicotine may be suggested as a potential agent against Covid 19 infection.

My MIL is doing better. Still in the hospital. My wife is a wreck tho.
Meals have been a blur. Until this morning when I came home to check on our place and made these to kill time between phone calls. I’m still working behind the scenes for when music returns to venues. Driving gigs haven’t stopped.

These sticky buns were just the ticket. Let’s call it dinner.
