For weeks, dh had been taking freezer purchases down to the freezer. It got to the point where I Last week the two of us did a freezer sort. Met “old friends” and ditched a few tired entities. I LOVE the freezer now. Added three bins, one for fresh meat, one for cooked or preserved meat, one for ready to eat meals. Else, filling in the edges.

Want a hot dog? On it! Want steak or chicken? On it. Something by Mrs. Callendar? What flavor? Should have done this months ago.

I’m not a big fan of pizza, at least the usual “pepperoni” the husband orders. Maybe too boring to be worth the carbs. But I remember one, years ago in Tahoe, that looked like your first pic. I’d eat that again.

Lotsa people doing Pizza. So are we. Tonight a Classic Dough from Wewalka, a Ragu Sauce, Hormel Pepperoni slices (some that even cupped!), Kroger grated Mozzarella cheese, and an “aged” red onion small diced.

The Sprout was in the mood for dumplings for dinner. I had everything she needed to make them except the dumpling wrappers. She’s learned from experience that if you make the wrappers you no longer want the dumplings. She created a Dumpling Bolognese and served it over rice cakes. It was very easy and very good.

Meatless Monday: roasted cauliflower and soy chorizo tacos with the works, creamy slaw in a chipotle, agave, and cilantro-lime dressing, and seasoned black beans.

I had pulled out what I thought was a cut-down pork loin on Saturday night, thinking I’d make it on Sunday. Didn’t realize until close to 6pm yesterday that it was a cut-down pork butt which requires much slower cooking.

So I had leftovers last night but also cooked the pork butt for several hours covered in the oven, then shredded it for tonight.

Pulled a 1/2 cup of Plum Ketchup from the freezer, and augmented it with soy sauce, ketchup, brown sugar, lemon juice, freshly grated ginger, minced garlic and a bit of the defatted, jellied pork juice from the pork butt.

Stirred in the shredded pork and let it heat up. Also pulled out a small mac & cheese and baked that off, and made a tomato-cuke salad.

Not bad for a Monday dinner.

Dry fried crispy beef and tofu. Also chock full of diced bell peppers, scallions, garlic, ginger and peanuts. Sauced with sambal oelek, Sriracha and a splash of soy sauce.

Linda, I don’t post here often for several reasons, but I am a frequent reader. I’m with you. People make comments about how someone is sick, someone just died, work was horrible, there were various train wrecks and then go on to talk about what they made for dinner. It’s inspiring to me to see how people cope whatever their circumstances and share what they made (or ate) for dinner. Some live alone and visit (or did) parents in nursing homes. Some have sick children. Some have other challenges. It’s a community. Some have challenging relatives and in-laws. And that was all before the pandemic.

If this forum is for upscale food blogging, I never knew it. If it is, I’ll stop reading it. There is a well established community here and I’m familiar with many of the regular posters. It’s a community created by the people who post.

Self appointed hall monitors/posting police? That’s a new element to the culture here, for me.

I too am doing a meatless Monday, but with Indian veggie korma.

Side note: a coworker gave me a large batch of something called Toum, which I’d never heard of. It’s a Lebanese garlic paste of sorts. I’m going to try to incorporate it into this meal somehow.

If anyone can pull off incorporating it with delicious results, it’s you. I’ve mainly had that stuff on pita bread and as a spread on toasted, buttered rolls with crispy chickpea patties (Lebanese resto). It’s pungent. Woof.

I went to the grocery store today. It was the first time I’ve done a real shopping trip in over 2 months. Surreal to see everyone in masks and lots of empty shelves. But, I did get plenty of grains, cheap Peep’s, seltzer and steaks on the grill!!!

Love toum - you can use it anywhere you might mayo, but with a heavy garlic punch. It’s just oil and garlic emulsified, so you can use it in a lot of different ways. Yum!

No pics tonight. Very slumpish day for me for some reason. Blah. Ok done.

Did cook, though - chicken with porchetta seasoning for lunch, which was quite delicious, though I had only a bite and consoled myself with mashed sweet potatoes with green chutney in lieu of the Ottolenghi lime salsa. For dinner - spanish pinchos-style pork chop (based on a milk street recipe I like) and sautéed greens from the neighbor’s vegetable garden (which is gorgeous, and overflowing). Kids had grilled cheese and roasted broccoli (of which there is never enough, lol - it was for everyone, but we really need two trays not one).

Off for a sunset walk now to blow away my blahs.

Spent the whole day at the office. It’s just me there right now so no worries about social distancing and the such. Yesterday I put a package of salmon in the frig to defrost for tacos. Quickly fried a few corn tortillas for chips, cooked the salmon on the grill’s side burner (no fish smell in the house), and blended up a roasted tomatillos with onions, lemon, and pickled jalapeños. Beer to drink (I had Eagle Rock Brewing Populists and DH had Highland Park Brewing Hello LA). Running low on beer.
