Chilled peanut buttery sesame soba noodles tonight with lots of cilantro, some green onions and chopped sugar snap peas (ok fine i ate a few handfuls of the sugar snap peas while waiting for the water to boil!)
One of my all time favorites, and enough leftover for a few lunches.
The maple bread is really incredible - I got the “recipe,” such as it is, from Amy Thielen’s show. It couldn’t be simpler - just butter and maple syrup in a skillet, add the bread and cook until the bread has absorbed everything and is caramelized. I tend to use a bit more butter and a bit less syrup than she calls for, so the sweetness is a bit more subtle. SO good with a really ripe, strong cheese.

When I make French toast I always sprinkle with maple sugar to caramelize at the very end.

WFD: CSF share. Today is Monkfish Fillets from the F/V SS Mellon II.
~ Roasted Monkfish from Jasper White’s Cooking from New England. S & P and fresh thyme for seasoning, flour for dredging, ghee for searing. The fillets will be seared first in a cast iron skillet, then into the oven they go to finish. When done, slightly undercooked, the fish will rest for 5 min, most necessary to ensure residual cooking. During the rest time a fresh relish of chopped tomatoes, kalamata olives, garlic, S & P & olive oil & balsamico is prepared to serve with the fish.
~Rice and Beet Greens AKA Spanokorizo. This is fast becoming our go-to prep for leafy greens this Summer. Easy, quick, tasty, two dishes in one.

Leftover piece of grilled rib eye warmed through . little bit of morels and chanterelles sautéed in butter . Peas cooked in tomato . Cannellini beans with a hint of fresh rosemary and garlic drizzled with oo .
A long day at work. Not home until 8 tonight. Pork chops were out to be cooked, so they ended up thin-sliced and velveted in some dry sherry and cornstarch.
Broccoli and a bit of leftover minced onion was sauteed in hot oil; the pork was added along with a hefty galumph of grated fresh ginger, some salt and pepper, and then a sploosh of white wine. A half cup of chicken stock was added with about a Tbsp. of fresh lemon juice and it all finished cooking.
Served over basmati rice mixed with some mango powder I had for a little bit more citrusy flavor. Not too shabby for a last minute throw-together.
Back on the low-carb straight and narrow tonight! I came home to a fridge full of odds and ends that needed using, so I threw together a meatloaf mix with ground pork, ricotta, eggs, garlic, scallions, sliced green olives, plus a ton of fresh(ish) herbs. I shaped them into minis and wrapped with bacon for a treat, and served with a sauce made by blitzing leftover roasted tomatoes and caramelized onions together in the blender. It turned out much tastier than I thought it would!
Long day at work grateful for a cold potato egg fritata in the fridge and some fresh picked greens also grateful for the cheap Spanish red.
Long day today… As i was staring into the blank spot in my fridge where the wine used to be (damnit!!) i realized i had bits and bobs that nearly made a nicoise-ish salad. A few leftover boiled potatoes, some leftover garlicy chickpeas, fancy olives, i steamed some green beans, and then put it all over some salad greens with a quick vinegrette that had a serious kick from the very potent dijon i used and the last few slices of smoked tofu since hard boiled eggs really aren’t my favorite thing.

Tried something new speghetti squash with chicken “Alfredo”. Not too bad…
Looks good - I like stuffed spaghetti squash, and everything is good with Alfredo sauce!
Tired. Another one of “those” days at work.
Picked up a roasted chix from Market Basket to make a BLT & Chix & Cheese. That on a lightly toasted (but not toasted enough, unfortunately) burger bun lightly schmeared with mayo, along with a handful of cherries and a glass of wine, was dinner.
And yes, that’s a messy coffee table on which I’m eating in front of the TV.
Wifey is at a late meeting so it’s a porky dinner. Pork belly ramen
Amys frozen enchiladas . Just finished having acupuncture , cuppage , and e stem trearment on my shoulder . I feel doozy after the treatment .
Weird sticky and hot night here. I hate hate hate eating dinner at my desk so i made do with some dry roasted edamame and cashews, but still was hungry for something by the time i finally got home.
Savory smoothie of cucumber, cilantro, part of a grapefruit, a few chunks of pineapple and ice, with a side of sugar snap peas and radishes dunked in edamame hummus and sprinkled with salt.
The rest of the coconut milk ice cream will likely not live to see tomorrow.
