That one looks great. I use this one which was a thrift find. It’s large and works pretty well. Sometimes the two pieces come apart too easily which makes it easier to clean but can also make its utility a little clunky.
Usually I use a norpro river but I’m going to try a food mill this thanksgiving. Someday I’ll find a tamis and try that.
I finally bought a tamis … it’s a lot of work. I really don’t think you need to use both a ricer and a tamis.
I have a great Mouli food mill that I’ve been using for canned tomatoes, making sauce. I decided to try it on potatoes instead of a ricer. It’s easier.
For mashed potatoes I like the Serious Eats method of first rinsing chunks of Russets in cold water, cooking, draining, then a quick rinse in hot water.
Most of the time I add chunks of room temperature cream cheese, butter, a bit of milk.
Try Mexican crema and butter.
Nice! How often do you empty or use the compost in your garden? I so want to think one of those make sense for my kitchen.
The cannister in it is about 2.5L in size.
Depending on how active we are in the kitchen, it usually is filled up in a couple of days.
Of course, you don’t have to wait until its filled to turn it on. Since its so quiet, you can just let it run overnight (depending on how much is in it, the process takes anywhere between 3 to 6 hours).
I know this much. Given that it’s inside (and not outside) and it’s so quiet and relatively inconspicuous and small in footprint, I will be composting alot more.
This got me into the rabbit hole of tofu presses. I thought a ceramic one made good sense. I found plasrtic, stainless, and bamboo. I may need to make or commission one.
Hmmm.
From a previous discussion
My SIL gave us a large 2-piece silicone popcorn popper intended for the MWO. We repurposed it to be a countertop container for compostables. When that gets full, we transfer the stuff to an outside, in-ground digester and yard waste composter. We’re actually pleased how well the silicone thing seals in odors.
That was one of my nephews’ favorite kitchen gadgets during the pandemic. It makes excellent popcorn.
What is MWO?
Microwave oven.
We just use a saucepan. Not thrilled about cooking in silicone.
Please start a thread on it if you have some research to share – it’s been heavily discussed in my circles wrt silicone muffin cups, spatulas, etc.
Nah, not going to invite the flames.
https://pubmed.ncbi.nlm.nih.gov/37183940/ From the abstract: “Under severe usage scenarios such as high-temperature, high-pressure, microwave, and freezing environments with long-term use, SR products are more prone to aging, and their degradation products may pose potential food safety hazards.” The issues are not limited to siloxanes; they also include bacteriological pathogens.
I have a couple sets of fancy cocktail ice cube molds made of silicone. They develop a greasy slime that is hard to remove, and stale odors that are nearly impossible to get rid of. The only way I’ve been able to acceptably deodorize them is by burying them in granulated bentonite clay or unscented cat litter for extended periods.
The Popco SR popper I mentioned has taken on stains and smells that don’t come out.
There are so many options! Happy hunting.
I bought one of those silicone MW popcorn popper and like 10 people I know…during the pandemic. They do work very good. One thing I found was adding butter before popping helped a lot…then toss in dishwasher.
